An Italian classic -- creamy mascarpone and fresh zucchini on a thin, crispy crust!

Provided by cdelemos

Categories     Pizza

Time 50m

Yield 2

Number Of Ingredients 12

3 tablespoons olive oil
1 zucchini, thinly sliced into rounds
cooking spray
1 cup all-purpose flour
2 teaspoons active dry yeast
1 teaspoon white sugar
¼ teaspoon salt
2 tablespoons vegetable oil
⅓ cup warm water
¼ cup prepared pizza sauce
½ cup shredded mozzarella cheese
3 tablespoons mascarpone cheese

Steps:

  • Heat the olive oil in a skillet over medium heat. Fry the zucchini in the oil until golden brown, 5 to 8 minutes on each side. Remove from heat and set aside.
  • Preheat oven to 375 degrees F (190 degrees C). Spray an 8-inch pizza pan with cooking spray.
  • Combine the flour, yeast, sugar, and salt in a bowl. Slowly stir in the vegetable oil and warm water. Knead the dough until well blended. On a floured surface, roll the dough out with a rolling pin to fit the prepared pizza pan. Roll the crust thin, and fold over the edges to form a rim. Spread the pizza sauce over the dough, and sprinkle the mozzarella cheese on top. Arrange the zucchini slices over the cheese.
  • Bake in the preheated oven until the cheese is melted and the crust is browned, about 15 minutes. Spoon dollops of mascarpone cheese over the pizza. The cheese will melt onto the pizza and spread naturally. Allow the pizza to cool for 5 to 10 minutes before slicing and serving.

Yield 6

Number Of Ingredients 13

4 cups shredded unpeeled zucchini
½ teaspoon salt
2 eggs, lightly beaten
½ cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 cup shredded Monterey Jack cheese
1 pound ground beef
½ cup chopped onion
1 (15 ounce) can Italian-style tomato sauce
1 teaspoon Italian seasoning
1 green bell pepper, chopped
½ cup sliced fresh mushrooms
½ cup sliced black olives

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Place the zucchini in a colander and sprinkle with salt; let drain for 15 minutes then squeeze out the moisture.
  • Combine the zucchini, eggs, Parmesan, 1 cup mozzarella, and 1/2 cup Monterey Jack in a large bowl. Press the mixture into a greased 9x13 inch baking dish. Bake, uncovered, in the preheated oven for 20 minutes.

Delicious zucchini pizza bites make great use of large, firm zucchinis. Enjoy all the flavors of pizza using a tasty vegetable base!

Provided by Vered DeLeeuw

Categories     Side Dish

Time 30m

Number Of Ingredients 8

1 extra-large zucchini (total weight about 1 lb., unpeeled)
Olive oil spray (or avocado oil)
1/4 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 cup marinara sauce
2 oz shredded mozzarella
1 oz uncured pepperoni

Steps:

  • Slice the zucchini into 1/4-inch-thick slices. You can leave them unpeeled.
  • Preheat your broiler on high and position an oven rack 4 inches below the heating element (in most ovens this is simply the top rack). Line a rimmed baking sheet with foil and spray it with olive oil.
  • Arrange the zucchini slices on the prepared baking sheet. Lightly spray them with olive oil and sprinkle them with salt, pepper, and garlic powder.
  • Broil the zucchini slices until tender and lightly browned, about 2 minutes per side. Keep a close eye on them! Some might brown faster than the others - remove them to a plate and keep broiling the rest.
  • Remove the pan from the oven. Spoon a little marinara sauce on top of each zucchini slice. Top with cheese and pepperoni. Return to the broiler just until cheese is melted, 30-60 more seconds. Serve immediately.
