AGUA DE HORCHATA

Agua De Horchata image

This Horchata is the kind that is served in "neverias" or ice-cream shops in Mexico. It is creamy and easy to do. Grinding the rice twice brings out all the starch and flavor. Prep time is the time needed for the rice to soak. One reviewer stated that I don't know what I'm talking about and that the rice should be soaked overnight...if you choose to soak it longer, the result will be the same and you will still need to strain it as stated---twice. I do know what I'm talking about: I'm Mexican and live in Mexico.

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 5

3/4 cup rice
2 teaspoons ground cinnamon or 1 in cinnamon stick
1 1/2 teaspoons good vanilla (Mexican is best)
1/2-3/4 cup sweetened condensed milk
water, as necessary

Steps:

  • Rinse the rice in a colander. Place in a blender and add enough water to cover by an inch; soak 5 or 10 minutes. Add the vanilla and cinnamon and blend until finely ground. Drain the liquid through colander into a pitcher.
  • Return the ground rice to the blender. Add the condensed milk and about 2 cups water and blend again. Drain into the pitcher. Discard any remaining rice.
  • Add more water to the pitcher, one cup at a time, until it has the right amount of sweetness for you. Add ice and serve cold.
  • Note: you can add 1 cup sugar or so and 1 cup milk, instead of the sweetened condensed milk . I suppose you could use rice or even soy milk, but I haven't tried it.

Tips:

  • Use Fresh Rice: Fresh rice produces the best flavor and aroma in Agua de Horchata. If possible, use freshly harvested rice.
  • Soak the Rice Properly: Soaking the rice overnight allows it to absorb water and soften, resulting in a smoother and more flavorful drink.
  • Use Cold Water: Both for soaking and blending, cold water helps extract the flavors from the rice and prevents the drink from becoming too starchy.
  • Sweeten to Taste: The amount of sugar or condensed milk used in Agua de Horchata can be adjusted according to personal preference. Start with a small amount and add more to taste.
  • Use High-Quality Cinnamon Sticks: Ceylon cinnamon sticks have a more delicate and floral flavor compared to Cassia cinnamon, making them a better choice for Agua de Horchata.
  • Strain Thoroughly: Straining the Agua de Horchata through a cheesecloth or fine-mesh sieve removes any rice particles, resulting in a smooth and creamy texture.
  • Chill Before Serving: Chilling the Agua de Horchata for at least 4 hours or overnight enhances its flavor and makes it more refreshing.
  • Garnish Elegantly: Sliced almonds, ground cinnamon, or fresh mint leaves can be used as garnishes to add visual appeal and extra flavor to the drink.

Conclusion:

Agua de Horchata, with its delightful blend of nutty, sweet, and refreshing flavors, is a timeless beverage enjoyed worldwide. By following the tips mentioned above and experimenting with different variations, you can create a delicious and authentic Agua de Horchata that will surely impress your family and friends. So, gather your ingredients, let your creativity flow, and indulge in the enchanting flavors of this traditional Mexican drink. ¡Salud!
