This is super and makes a juicy and delicious chicken. The basting mixture is a win and adds an excellent flavor to the crispy skin. You can modify this for a whole bird, you will need to add more cooking time and you are going to want to truss your chicken to make sure the legs and wings are tucked in. (Google it, it's way easier than you think.)

Tips:

  • For the best results, use fresh chicken drumsticks. If using frozen drumsticks, be sure to thaw them completely before cooking.
  • To make the curry paste, use a food processor or blender to combine all of the ingredients until smooth. If you don't have a food processor or blender, you can also grate the ginger and garlic and chop the onion and pepper by hand.
  • When cooking the chicken, be sure to preheat the air fryer to the desired temperature before adding the chicken. This will help the chicken cook evenly.
  • Cook the chicken in batches if necessary. Do not overcrowd the air fryer basket, or the chicken will not cook evenly.
  • To make the curry sauce, simply combine all of the ingredients in a saucepan and bring to a boil. Then, reduce the heat to low and simmer for 10 minutes, or until the sauce has thickened.
  • Serve the chicken drumsticks with the curry sauce and your favorite sides, such as rice, vegetables, or naan bread.

Conclusion:

Air fryer crispy curry drumsticks are a delicious and easy-to-make meal that is perfect for busy weeknights. The chicken is juicy and flavorful, and the curry sauce is rich and creamy. This dish is sure to be a hit with your family and friends.
