Yield 6

Number Of Ingredients 13

3 tablespoons Greek yogurt
2 tablespoons mango chutney (such as Patak's®)
1 tablespoon mayonnaise
⅛ teaspoon salt
⅛ teaspoon pepper
⅛ teaspoon curry powder
⅛ teaspoon cayenne pepper
1 pound pork sausage (such as Jimmy Dean®)
6 eggs, hard-boiled and shelled
⅓ cup flour
2 eggs, lightly beaten
1 cup panko bread crumbs
cooking spray

Steps:

  • Combine yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne in a small bowl. Refrigerate until ready to use.
  • Divide pork sausage into 6 even portions. Flatten each portion into a thin patty. Place one egg in the middle and wrap the sausage around the eggs, sealing all sides. Set eggs aside on a plate.
  • Preheat air fryer to 390 degrees F (200 degrees C).
  • Place flour into a small bowl and beaten eggs into another small bowl. Place panko bread crumbs onto a plate. Dip each sausage-wrapped egg into flour, then dip into beaten egg, letting the excess drip off. Roll in bread crumbs and place onto a plate.

Time 30m

Yield 12

Number Of Ingredients 10

½ cup Greek yogurt
¼ cup stone-ground mustard
½ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
⅓ cup all-purpose flour
12 ounces spicy pork sausage
12 quail eggs, hard-boiled and peeled
1 egg, beaten
1 cup panko bread crumbs
1 serving cooking spray

Steps:

  • Combine yogurt, mustard, garlic powder, and cayenne in a small bowl. Cover and refrigerate mustard dipping sauce until ready to use.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place flour on a flat plate. Divide sausage into 12 equal balls. Using your hands, flatten each ball into a paper thin patty. Dust both sides of each patty with flour; the flour on one side will help the sausage adhere to the egg and the flour on the other side will keep the sausage from sticking to your hands.
  • Shape each sausage patty around a hard-boiled quail egg, making sure the egg is completely sealed inside. Dip each in the beaten egg and coat in bread crumbs.
  • Spray the air fryer basket with nonstick cooking spray. Place 6 eggs in the basket and mist the tops with cooking spray. Cook for 8 minutes. Flip and spray again. Cook 6 additional minutes. Repeat with remaining eggs.
  • To serve, slice each egg in half and serve with mustard dipping sauce.

Tips:

  • Preheat your air fryer for 3-5 minutes before cooking your eggs. This will help them cook evenly.
  • Use a non-stick cooking spray or oil to grease the air fryer basket. This will prevent the eggs from sticking.
  • Be careful with the cooking time. Eggs can overcook quickly in an air fryer. Start with a shorter cooking time and adjust as needed.
  • Use a fork or spatula to flip the eggs halfway through cooking. This will help them cook evenly.
  • Season the eggs to taste. You can use salt, pepper, garlic powder, onion powder, paprika, or any other desired spices.
  • Serve the eggs immediately or store them in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Air fryer eggs are a quick and easy breakfast, lunch, or snack. They are also a healthy alternative to fried eggs, as they are cooked with less oil. Experiment with different cooking times and temperatures to find your perfect egg. With a little practice, you'll be able to make delicious air fryer eggs in no time!
