1/2 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/4 cup confectioners' sugar
1 tablespoon lemon juice

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon zest and vanilla. Combine the flour, baking powder and salt; beat into creamed mixture alternately with milk. Fold in blueberries., Pour into a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. 1/2 c. margarine or butter
1 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 large eggs
1/2 c. milk
1 1/2 c. blueberries
1/4 c. fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 9'' by 5'' metal loaf pan.
  • In large bowl, with mixer at low speed, beat margarine or butter and 1 cup sugar just until blended. Increase speed to medium; beat until light and fluffy, about 5 minutes.
  • Meanwhile, in medium bowl, combine flour, baking powder, and salt.
  • Reduce speed to low; add eggs, one at a time, beating after each addition until well blended, occasionally scraping bowl with rubber spatula. Alternately add flour mixture and milk, mixing just until blended. Gently stir in blueberries. Spoon batter into loaf pan.
  • Bake loaf 1 hour and 5 minutes or until toothpick inserted in center comes out clean. Cool loaf in pan on wire rack 10 minutes; remove from pan.

1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups mashed ripe bananas
1/4 cup fat-free buttermilk
2 tablespoons lemon juice
2 tablespoons canola oil
2 large egg whites
1 large egg yolk
1 teaspoon grated lemon zest
1 cup blueberries
1/2 cup confectioners' sugar
2 teaspoons lemon juice
1/2 teaspoon grated lemon zest

1 1/2 cups plus 2 tablespoons all-purpose flour
1 cup granulated sugar
2 large eggs
1 lemon, zested and juiced (about 3 tablespoons of each)
1 teaspoon baking powder
Kosher salt
1/2 cup milk
1/2 cup chopped pecans
1 lemon, juiced
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 4-by-8-by-2-inch loaf pan.
  • Toss the blueberries in 2 tablespoons of the flour in a medium bowl and set aside.

1 (.25 ounce) package rapid rise yeast
½ teaspoon ground cardamom
¾ cup milk
¼ cup white sugar
¼ cup butter, softened

1 teaspoon finely grated lemon zest
½ teaspoon lemon extract
2 teaspoons milk
2 tablespoons sliced almonds
