Time 30m

Yield 12 muffins

Number Of Ingredients 12

2 cups cooked rice, cooled (any variety, sticky white rice holds together better)
1 (170 g) can tuna in water
1 cup cheddar cheese, grated
1 tablespoon parsley
1 tablespoon fresh onion, depending on taste (or more)
1 teaspoon seasoning salt
2 tablespoons milk
2 eggs
1 tablespoon lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon parsley
1/4 cup melted butter or 1/4 cup margarine

Steps:

  • Mix first eight ingredients together and lightly press into a very well greased muffin tin.
  • Bake at 375 F for 15 minutes. Tops should just start to brown & bubble. Note - baking time will vary with size of muffin tins.
  • Let cool about 5 minutes to allow for easier removal from pans then turn out onto individual serving dishes.

Yield 2 serving(s)

Number Of Ingredients 9

1/2 cup drained canned artichoke heart, finely chopped (optional)
1/4 cup sliced green onion
1 tablespoon lemon juice
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper (or to taste)
1 (6 ounce) can albacore tuna in water, lightly drained and flaked
2 English muffins, split and toasted
6 tablespoons grated shredded provolone cheese or 6 tablespoons grated shredded sharp cheddar cheese

Steps:

  • Preheat broiler.
  • Combine first 7 ingredients in a medium bowl.
  • Divide evenly among muffin halves, sprinkle with cheese.

Tips:

  • For the best results, use fresh albacore tuna. Canned tuna will also work, but the flavor will not be as good.

  • If you don't have any mayonnaise, you can substitute plain yogurt or sour cream.
  • Feel free to add other ingredients to the muffins, such as chopped vegetables, cheese, or herbs.
  • These muffins can be made ahead of time and reheated in the microwave or oven.

Conclusion:

Albacore tuna muffins are a delicious and easy-to-make snack or meal. They are perfect for busy weeknights or for packing in lunches. With a few simple ingredients, you can have a batch of delicious muffins ready in no time.
