PERFECT SOY-GRILLED STEAK

Perfect Soy-Grilled Steak image

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

Time 30m

Yield 4 servings

Number Of Ingredients 7

1/4 cup soy sauce
1 teaspoon peeled and minced ginger
1/2 teaspoon peeled and minced garlic
1 tablespoon honey, molasses or hoisin sauce
Freshly ground black pepper to taste
Juice of 1/2 lime
1 16- to 24-ounce boneless steak (rib-eye, skirt or strip), or one 24- to 32-ounce bone-in steak (rib-eye or T-bone)

Steps:

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

Yield 2 serving(s)

Number Of Ingredients 8

Steps:

  • Marinate the steak in the soy sauce, port wine, and garlic for at least one hour.

Time 3h35m

Yield 4

Number Of Ingredients 12

1 ½ cups sweet soy sauce (Indonesian kecap manis)
1 cup sake
1 cup pineapple juice
1 cup mirin
½ cup reduced-sodium soy sauce
¼ bunch fresh cilantro, chopped
1 tablespoon white sugar
1 tablespoon minced fresh ginger root
1 tablespoon minced garlic
1 tablespoon chopped scallions (green onions)
1 tablespoon chile paste
1 (1 pound) skirt steak

Steps:

  • Whisk sweet soy sauce, sake, pineapple juice, mirin, reduced-sodium soy sauce, cilantro, sugar, ginger, garlic, scallions, and chile paste together in a large glass or ceramic bowl. Add skirt steak and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove meat from marinade, and shake off excess. Pour marinade into a saucepan; bring to a boil and cook until sauce is reduced by half, about 10 minutes. Strain sauce into a bowl.
  • Cook steak on the preheated grill until it begins to firm and is hot and slightly pink in the center, about 4 to 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steak to a plate and let rest, about 5 minutes. Serve steak with sauce.

Tips:

  • Choosing the Right Steak: Opt for a well-marbled steak, such as ribeye, strip loin, or tenderloin. These cuts have higher fat content, which results in more flavor and tenderness.
  • Marinating the Steak: Marinating the steak in soy sauce-based marinade not only adds flavor but also tenderizes the meat. Allow the steak to marinate for at least 30 minutes, or up to overnight for deeper flavor.
  • Cooking Temperature: Use a meat thermometer to ensure the steak is cooked to your desired doneness. For medium-rare, cook to an internal temperature of 135°F (57°C); for medium, cook to 145°F (63°C); and for well-done, cook to 160°F (71°C).
  • Resting the Steak: After cooking, let the steak rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Garnishing and Serving: Garnish the steak with fresh herbs like cilantro or scallions for an extra layer of flavor. Serve with a side of steamed vegetables or fried rice for a complete meal.

Conclusion:

The recipes presented in this article offer a delicious and versatile approach to preparing soy sauce steak. Whether you prefer a classic marinade or a more adventurous variation with additional ingredients, these recipes provide a range of options to suit your taste preferences. Remember to choose a high-quality steak, marinate it properly, cook it to your desired doneness, and let it rest before serving. With these tips in mind, you'll be able to create a flavorful and tender soy sauce steak that will impress your family and friends.
