1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

1/2 c milk
1/2 c sugar
1 1/2 tsp salt (can use less)
1/4 c butter, melted
1/2 c warm water (105-115 degrees)
2 pkg Fleischmann's active dry yeast
2 large eggs, beaten
4 1/2 c all-purpose flour, may need a bit more or less, see directions
additional butter for coating bowls used and brushing on tops of baked rolls

Steps:

  • 1. Scald milk (bring just to a boil and remove from heat immediately).
  • 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
  • 3. In a large bowl mix warm water and yeast. Stir until dissolved.
  • 4. Stir in lukewarm milk mixture.
  • 5. Add beaten eggs.
  • 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
  • 7. Your dough should be elastic and slightly stiff but not dry.
  • 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
  • 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
  • 10. Cover bowl and place in a warm place so it can rise.
  • 11. It will take about 1 hour to double in bulk.
  • 12. At that time punch dough down and turn out onto a lightly floured board to shape.
  • 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
  • 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
  • 15. Rolls should now touch each other. (A little more rising will occur during baking.)
  • 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
  • 17. Brush tops of rolls with melted butter immediately when removed from the oven.
  • 18. Allow rolls to sit for at least 10-15 minutes before eating.

480 g bread flour
120 g all-purpose flour
110 g sugar
20 g powdered milk
4 teaspoons instant yeast (not fast rising or anything like that, just regular instant baker's yeast)
1 egg
300 ml cold water
60 g butter
10 g salt

Steps:

  • Mix flours, milk powder, yeast and sugar in a big bowl.
  • Add the egg and cold water and mix to form a dough. Add in the butter and salt and knead till a smooth dough forms. This takes a while.
  • At first the dough will be greasy and seem as if there is too much butter in it. But as you knead and knead and knead, it will eventually get to the point you want it to be.
  • Cover with clingwrap and let rise for about 1 hour or till doubled in size.
  • Preheat oven to 380 farenheit.
  • Divide dough into portions of 50 or 60 gm each. Shape into balls and leave it to rest for abt 10 minutes Roll out dough and wrap with desired fillings. Shape as required and let it proof on lined or greased baking tray for another 50-60 mins or until dough is double in size.
  • Brush dough with egg wash, or milk, if you want it to be less brown, and bake till golden brown and cooked.
  • Immediately brush with melted butter after taking it out of the oven and cover with a tea cloth to give it a soft crust.

This sweet dough recipe is my mother's, and this works out really well because it is an old recipe. I have also used others which were more recent and still turned out well, but this one is the best I have found. Use this recipe for the basis of your sweet breads.

1 cup milk
8 cups sifted all-purpose flour
1 ¼ cups cold water
2 (0.6 ounce) cakes compressed fresh yeast
2 teaspoons salt
½ cup white sugar
4 tablespoons shortening
2 eggs
2 tablespoons melted shortening

Steps:

  • Scald milk in a medium saucepan. Add cold water to scalded milk. Remove 1/4 cup liquid; mix yeast into liquid when cooled to lukewarm. To liquid in saucepan, add salt, sugar, shortening, and eggs. Add dissolved yeast to saucepan. Mix well.
  • Sift and measure the flour into a large bowl. Make a well in the flour, and pour the liquids into the well. Stir with a large wooden spoon until liquid disappears.

* 250 grams Plain Flour
* 5 grams Yeast
* 25 grams Sugar
* ½ teaspoons Salt To Taste
* 110 milliliters Warm Water
* 1 whole Egg, Beaten, Divided Use
* 25 grams Butter, Softened

* ¼ cups Strawberry Jam
* ¼ cups Candied Mixed Fruit

Steps:

  • In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter and mix until combined. Knead by hand until smooth and elastic, about 10 minutes.
  • Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make 8 round balls and allow them to rise for 10 minutes
  • Now take out each ball and roll out with a rolling pin until you get a thin disk (diameter 3 inch, thickness 1/4 inch).
  • Place some strawberry jam and sprinkle some candied mixed fruit on the top of the disk. Then wrap and cover the filling from all sides with the dough. Then, pinch the seams to close. Next shape the dough into a ball shape. Using sharp scissors, snip the top surface of the dough a bit to form petals to shape it like a flower (see photo)
  • Place buns on a greased metal tray and allow them to rise for 20 minutes. Next brush the remaining beaten egg over the top of the buns.
