This is a fruit loaf cake, using All Bran as the main ingredient.

Number Of Ingredients 5

1 cup All Bran
1 cup Milk
1 cup Self raising flour
1/2 cup or 1 cup Soft brown sugar (depending on desired sweetness)
A standard loaf tin

Steps:

  • Grease and line your loaf tin, and preheat the oven to 170C/fan 150C/gas 5.
  • Use a cup to measure the ingredients (I use my small measuring jug featured in the photograph.)
  • Pour the All bran and milk into a bowl. Leave the All Bran to soak up the milk (about 5-10 mins.)
  • Add the self raising flour and sugar to your mixture and stir.
  • Cut up your dried fruit (if using prunes and apricots) and dust with some of the self raising flour. Add the fruit to your mixture and stir.
  • The mixture should be thick and gloopy, if it isn't you may wish to add a bit more milk. Transfer the mixture to your loaf tin and put in the oven for 1 hr -1 hr 30 mins. Check on the loaf after 1 hr by putting a knife through the middle, if it comes out clean the loaf is cooked, if not leave it in a little longer.

It might be old-fashioned, but tea loaf rocks! It's perfect for serving for 'elevenses' or as a mid-afternoon 'pick me up'. It also makes a delicious after-school and travel snack. It's incredibly easy to make. You simply soak the dried fruit in a cup of tea for a few hours, then mix all the ingredients together and bake.

250 ml / 1 cup strongly brewed black or green tea
225 g / 1½ cups mixed dried fruit ((I use raisins, sultanas, goji berries, candied citrus peel))
113 g / ½ cup unrefined cane sugar or coconut sugar
1 TBSP marmalade or apricot jam
227 g / 1⅔ cups fine wholemeal (whole wheat pastry) or chapatti flour
2 tsp baking powder
1 tsp ground cinnamon or mixed spice
3 TBSP water

Steps:

  • Soak the dried fruit in the brewed tea for 4-5 hours (can be left overnight).
  • Grease a 2lb loaf pan and line the bottom with non-stick baking paper (or use a non-stick loaf liner).
  • Pre-heat the oven to 160C (160C for fan also) / 325F.
  • Tip the dried fruit and any remaining tea into a mixing bowl. Stir in the sugar and marmalade/jam. Sift in the flour, baking powder and spice. Tip any remaining wheatgerm from the sieve into the bowl. Add 3 TBSP water and stir until thoroughly combined.
  • Tip the mixture into the prepared tin and level the top.
  • Bake for 1¼ hours, or until a skewer inserted in the middle comes out clean. Leave to rest in the tin for 30 minutes or so, then transfer to a wire rack until completely cooled.
  • Stored in an airtight container, the loaf will keep for up to five days in the fridge. It also freezes well.

Steps:

  • get a mixing bowl and had one cup of allbran cerel
  • one cup of sugar,mixed fruit,and milk and leave for 30 mins
  • then add one cup of flour,mix well ,put into a one pound loaf tin and cook on 180,for 1 hour pull out after the hr ,
  • and check with knife if it comes out clean then it is cooked , not cooked cover with tinfoil and cook for another 30 mins,then leave to stand for 10 mins to cool.
  • then pull out and slice and spread some butter on and enjoy

Tips:

  • For a sweeter loaf, use 2 cups of sugar instead of 1 3/4 cups.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To make sure the loaf is cooked through, insert a toothpick into the center. If it comes out clean, the loaf is done.
  • Let the loaf cool for at least 10 minutes before slicing and serving.
  • Serve the loaf with butter, cream cheese, or your favorite jam.
