Time 8h15m

Number Of Ingredients 9

3 lb whole button mushrooms
1/2 c butter
2 c burgundy wine
1 Tbsp worcestershire sauce
1 tsp minced garlic
1 tsp dill weed
1 tsp black pepper
2 chicken bouillon cubes
2 beef bouillon, cubes

Steps:

  • 1. Wipe any dirt from mushrooms with a wet paper towel. Place the mushrooms in a large stockpot. Add the remaining ingredients to the stockpot. The liquid will not cover the mushrooms at first.
  • 2. Cook, covered, over very low heat for 4 hours, stirring occasionally so that the mushrooms are completely covered with cooking liquid.
  • 3. Remove the cover and cook for an additional 4 hours. The mushrooms will shrink by half and become saturated with cooking liquid. Remove with a slotted spoon and serve in a bowl.
  • 4. Optional Cream Finish: Pour 3/4 cup cream into a nonstick fry pan and heat over medium heat until it begins to get hot. Add cooked mushrooms and simmer for 10 minutes until cream thickens.

Tips:

  • Choose the Right Mushrooms: Opt for fresh, firm, and flavorful mushrooms. Avoid any with bruises or blemishes.
  • Clean Mushrooms Properly: Rinse mushrooms briefly under cold water to remove dirt and debris. Do not soak them as it can make them soggy.
  • Slice Mushrooms Evenly: Ensure uniform slices for even cooking. Smaller mushrooms can be left whole.
  • Use the Right Cooking Method: Different recipes may require different cooking techniques like grilling, sautéing, or roasting. Choose the method that best suits your dish.
  • Season Wisely: Enhance the flavor of mushrooms with herbs, spices, and seasonings. Garlic, thyme, and rosemary are popular choices.
  • Add Aromatics: Incorporate aromatic ingredients like onions, shallots, or leeks to add depth and complexity to your dishes.
  • Cook Mushrooms in Batches: Avoid overcrowding the pan to prevent steaming and ensure proper browning.
  • Don't Overcook: Mushrooms cook quickly, so be careful not to overcook them as they can become tough and rubbery.
  • Enhance with Sauces: Create delicious sauces or glazes using butter, olive oil, soy sauce, or balsamic vinegar to complement the mushrooms.

Conclusion:

Mushrooms are a versatile and flavorful ingredient that can elevate various dishes. With their meaty texture and umami taste, they are a perfect addition to soups, stews, pasta, pizza, salads, and more.
