1 1/2 celery stalks, chopped
7 cloves garlic, minced
Pinch crushed red pepper
1/4 cup tomato paste
3 sprigs parsley
3 sprigs fresh thyme
1 bay leaf
1 large waxy-style potato (about 3/4 pound), diced
5 cups clam juice (five 8-ounce bottles clam juice)
One 28-ounce can whole, peeled tomatoes (with liquid), roughly chopped

1 tablespoon kosher salt or to taste
Freshly ground black pepper
2 tablespoons chopped parsley for garnish

Pour in the clam juice and bring to a boil. Lower the heat and simmer, covered, until the potatoes are tender, about 10 minutes. Stir in the tomatoes and clams. Cover and bring to a low simmer. The Chart House Clam Chowder (Copycat) Including Spice Blend image

From The Cliff House in Ogunquit, Maine, is this wonderful, glorious clam chowder! It is smooth and velvety, and will warm you to the bone! This recipe is so worth making! Even in the desert, where I live it gets cold, and I made this to warm everyone up and it definately did the trick! This is a definate keeper! I hope you will enjoy! The spice blend can be uses for so many things, I make about a triple recipe, and it keeps well in either a zip bag or a container with a tight-fitting lid. Note: If you get all of your ingredients together before you begin, the cooking part is a snap!

Tips:

  • Use fresh clams: Fresh clams have a sweeter, brinier flavor than canned clams. If you can find them, use fresh clams for the best flavor.
  • Purge the clams: Before cooking, purge the clams to remove any sand or grit. To do this, place the clams in a bowl of cold water and let them sit for 30 minutes. Drain the water and repeat the process until the water is clear.
  • Use a good quality clam juice: The clam juice is an important part of the chowder, so make sure to use a good quality brand. Look for clam juice that is made with fresh clams and has a clear, briny flavor.
  • Don't overcook the clams: Clams are delicate and can easily be overcooked. Cook them just until they are opaque and tender, about 5-7 minutes.
  • Add vegetables and seasonings to taste: The recipe below is just a starting point. Feel free to add vegetables and seasonings to taste. Some popular additions include potatoes, carrots, celery, onions, garlic, thyme, and bay leaves.

Conclusion:

Red clam chowder is a delicious and hearty soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With its rich, flavorful broth and tender clams, red clam chowder is sure to be a hit with everyone at your table.
