¼ cup orange juice
1 ½ cups rice flour
¾ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon salt

1 cup finely shredded carrots
¼ cup vegetable oil
2 tablespoons water

1/4 cup sweetened flaked coconut
3 large eggs
1 cup vegetable oil
2 teaspoons vanilla
1 large granny smith apple
