Yield 4 servings

Number Of Ingredients 10

4 slices whole-grain or whole wheat bread
2 tablespoons sliced skin-on almonds
1 tablespoon white wine vinegar
Juice and zest of 1/2 orange plus other half reserved
1 tablespoon extra-virgin olive oil
Kosher salt
1 large avocado, halved, pitted, scooped and quartered
5 ounces baby arugula (about 8 cups)
1/3 cup crumbled feta cheese
5 radishes, very thinly sliced

  • Meanwhile, put the vinegar, orange juice and zest, oil and 1/4 teaspoon salt in a jar or other container with a lid. Secure the lid, and shake until combined. (The vinaigrette can be made a day ahead; shake well before serving.)
  • Put an avocado quarter on each slice of toast, and mash and spread the avocado with a fork to cover. Quarter each piece of toast, and arrange the pieces on 4 plates with the points facing out to make a square.
  • Toss the arugula, toasted almonds, feta, radishes and vinaigrette in a medium bowl. Taste and adjust seasoning with salt if necessary. Put a mound of salad on top of each avocado toast square. Quarter the remaining orange half, and garnish each salad with a piece.

SUGARED TOASTED ALMOND SALAD TOPPING

Sugared Toasted Almond Salad Topping image

This simple topping turns an average salad into something above and beyond! I pair these with my sweet sour salad dressing and they make an amazing salad! I like to make up a big batch of these and keep them on-hand in an airtight container to use as a salad topper. I like to toast my almonds to a nice medium-brown, they take on a bolder flavor and really mix well in any salad.

Tips:

  • Use ripe avocados: Ripe avocados are creamier and have a richer flavor. To check if an avocado is ripe, gently squeeze it. It should yield to gentle pressure.
  • Choose the right almonds: Sliced almonds are the best type of almonds to use in this salad. They add a nice crunch and flavor.
  • Make a flavorful dressing: The dressing is what really brings this salad together. Be sure to use a good quality olive oil and vinegar. You can also add a bit of honey or maple syrup to taste.
  • Don't overdress the salad: A little dressing goes a long way. You don't want to weigh the salad down with too much dressing.
  • Serve the salad immediately: This salad is best served immediately after it is made. The avocados will start to brown if they sit for too long.

Conclusion:

Almond avocado tossed salad is a delicious and healthy salad that is perfect for a light lunch or dinner. It is packed with nutrients and has a great balance of flavors. The creamy avocado, crunchy almonds, and flavorful dressing come together to create a salad that is both satisfying and refreshing. This salad is also very versatile. You can add other ingredients to it, such as grilled chicken, shrimp, or tofu. You can also change up the dressing to suit your taste. No matter how you make it, almond avocado tossed salad is a surefire hit.
