Time 10m

Yield 4 sandwiches, 4 serving(s)

1/2 small onion, diced
salt, to taste
pepper, to taste
1 lettuce leaf
8 slices light bread

Steps:

  • You can toast your own almonds either in a frying pan or in the oven. Be careful to watch them, though, because they will burn quickly.
  • In a medium bowl, gently combine chicken breast, toasted almonds, dried cranberries, Miracle Whip Light, celery, onion, salt, and pepper until all is well coated.
  • Place one-fourth of the mixture on each of four slices of bread. Top with a lettuce leaf and another slice of bread. Enjoy!

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best in this recipe. If using chicken breasts, pound them thin to ensure even cooking.
  • Use fresh cranberries: Fresh cranberries add a bright, tart flavor to the dish. If you don't have fresh cranberries, you can use frozen cranberries, but thaw them before using.
  • Don't overcook the chicken: Chicken is best when cooked to an internal temperature of 165 degrees Fahrenheit. Overcooking will make the chicken dry and tough.
  • Make sure the sauce is thick enough: The sauce should be thick enough to coat the chicken and vegetables. If it's too thin, add a cornstarch slurry (equal parts cornstarch and water) and bring to a simmer until thickened.
  • Serve immediately: This dish is best served immediately, while the chicken is hot and the sauce is still bubbling.

Conclusion:

This almond cranberry chicken is a delicious and easy-to-make dish that's perfect for a weeknight meal. The chicken is tender and juicy, the sauce is flavorful and tart, and the almonds add a nice crunch. Serve it over rice or noodles for a complete meal.
