PEACH MELBA ALMOND CRISP

Peach Melba Almond Crisp image

Came up with this recipe by combining all of my favorite flavors: peach, raspberry and almond. I love a good apple crisp so I took my mom's apple crisp recipe and changed things up a bit. This combination is perfect because it's a tiny bit tart and the almond crumbles sweeten it up just enough.

### Almond Peach Cobbler: A Delightful Summer Dessert ### Ingredients and Variations: * The recipe calls for fresh peaches, but you can use canned peaches if they are unavailable. * You can use other stone fruit such as nectarines or apricots instead of peaches. * If you don't have almond meal, you can grind almonds in a food procesador until fine. * For a gluten-free version, use gluten-free oats or almond meal instead of all-purpose four. ### Step-by-Step Instructions: 1. **Filling:** Peel and dice the peaches. Combine them with sugar, cornstarch, and spices in a bowl. 2. **Crust:** In a separate bowl, mix the oats, almond meal, brown sugar, salt, and butter until crumbly. Set half of the mixture for the topping and press the rest into a 9-inch pie plate to form the crust. 3. **Assemble and Bake:** Pour the peach mixture into the crust. Sprinkle the remaining oat mixture on top. Bake at 375 °F for 35-40 minutes or until the crust is golden and the peaches are bubbly. 4. **Serve:** Let the cobbler cool for at least 15 minutes before serving. You can top it with whipped cream, ice cream, or a sprinkle of powdered sugar. ### Key Baking Techniques and Troubleshooting: * When making the crust, work the butter into the dry ingredients quickly to prevent the butter from melting too much. This will help create a flaky crust. * If the crust is too crumbly to press into the pie plate, add a tablespoon or two of water and work it in until it comes together. * If the peaches are very juicy, you may need to add a little more cornstarch to the fruit mixture to prevent the cobbler from being too runny. * If the cobbler is not bubbling after 35-40 minutes of bakng, cover it with foil and bake for an additional 10-15 minutes. ### Serving Suggestions and Presentation: * Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream. * For a more rustic presentation, serve the cobbler directly from the pie plate. * Garnish with fresh peach slices, a sprig of thyme, or a dusting of powdered sugar. ### Nutritional Information: One serving of almond peach cobbler (1/8 of the recipe) contains approximately: * Calories: 250 * Total fat: 10g * Saturated fat: 5g * Cholesterol: 25mg * Sodium: 100mg * Carbohydrates: 35g * Dietary Fiber: 5g *Sugars: 20g * Protein: 5g ### Healthier Alternatives: * To reduce the amount of saturated fat in the recipe, use half butter and half coconut oil or avocado oil to make the crust. * You can also reduce the amount of sugar in the recipe by using a natural sweetener like maple syrup or agave nectar. * For a lower-carb version, use almond four or coconut four instead of oats in the crust. ### Final Thoughts: Almond peach cobbler is a delicious and easy-to-make summer dessert. It's a great way to use up fresh peaches and is perfect for potlucks, picnics, or any other casual gatherings. With its combination of sweet peaches, crunchy oat crust, and nutty almond topping, this cobbler is sure to be a hit with everyone who tastes it.
