Tips:

  • For the best flavor, use fresh rhubarb. If you can't find fresh rhubarb, you can use frozen rhubarb, but be sure to thaw it and drain it well before using.
  • To make sure the almond filling is smooth, be sure to grind the almonds very finely.
  • If you don't have a pastry brush, you can use a spoon to brush the egg wash onto the pastry.
  • Be sure to preheat your oven before baking the pastry. This will help the pastry to rise evenly.
  • Keep an eye on the pastry while it's baking. If it starts to brown too quickly, cover it with aluminum foil.

Conclusion:

This almond rhubarb pastry is a delicious and easy-to-make dessert that is perfect for any occasion. The almond filling is smooth and creamy, and the rhubarb adds a tart and tangy flavor. The pastry is flaky and buttery, and it pairs perfectly with the filling. This recipe is sure to be a hit with your family and friends.
