Categories     main-dish

Time 20m

Yield 2 to 4 servings

Number Of Ingredients 9

1 pound spaghetti
2 cups cubed pancetta rind removed
2 teaspoons olive oil
1/4 cup dry white wine or vermouth
4 eggs
1/2 cup freshly grated Parmesan
1/4 cup heavy cream
Freshly ground black pepper
Freshly ground nutmeg

Steps:

  • Put a large pan of water on to boil for the pasta.
  • In another large pan that will fit the pasta later, cook the pancetta cubes in the oil until crispy but not crunchy. Pour over the white wine or vermouth and let it bubble away so that, after a few minutes, you have a small amount of salty winey syrup left. Take the pan off the heat.
  • In a bowl, beat together the eggs, Parmesan, cream, and pepper. Cook the pasta according to the packet instructions, but since you want it kept al dente start checking it 2 minutes before end of the recommended cooking time.
  • When the pasta is done, remove approximately 1/2 cup of the pasta water before draining. Put the pan with the bacon cubes back on the heat and add the drained pasta, tossing well to coat with the syrupy pancetta. Take the pan off the heat again and add the eggs and cheese mixture, swiftly tossing everything to mix. Thin with pasta water, if needed. Grind over some more pepper and grate over the nutmeg to serve.

BREAKFAST CARBONARA

Breakfast Carbonara image

Alton Brown developed this recipe for his book "EveryDayCook" because it hits all of the best notes of breakfast in a way that is much more appealing than just eggs, sausage and toast. If you eat pasta early in the day, he reasons, that leaves plenty of time to work it off. He's a fan of cooking in cast iron, and calls for it here. But any good 12-inch sauté pan will do.

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 11

1 tablespoon grated orange zest
1/4 cup flat-leaf parsley leaves, finely chopped
1/4 cup fresh bread crumbs
1 tablespoon kosher salt
8 ounces dried linguine, preferably whole wheat
2 teaspoons olive oil
8 ounces breakfast sausage, either bulk or removed from its casings
2 scallions, thinly sliced
4 large eggs, room temperature
3 ounces Pecorino Romano, finely grated
1 teaspoon freshly ground black pepper

Steps:

  • Combine the orange zest, parsley and bread crumbs in a small bowl and set aside.
  • Add 2 quarts of water, salt and linguine to a large sauté pan. Cover and bring to a boil over medium-high heat. Reduce the heat to low and cook for 4 minutes, or until the pasta is al dente.

  • While the pasta and sausage cook, whisk together the eggs, cheese and pepper.
  • Drain the pasta, reserving a 1/3 cup of the starchy water. Add the pasta to the sausage mixture, tossing well to coat.

ARCTIC CHAR BURGERS

Arctic Char Burgers image

The Food Network personality Alton Brown is deeply in love with arctic char because it is sustainable, affordable and delicious in several applications. He punches up these fish burgers with horseradish and furikake, a Japanese seasoning mix that usually contains ground fish, sesame seeds, seaweed, sugar and MSG. He discovered it on the set of "Iron Chef America," which he hosted for Food Network. Of all the recipes in his book "EveryDayCook," it is his favorite.

Categories     burgers, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 12

1 pound boneless, skinless arctic char fillets
1/3 cup panko bread crumbs
1/4 cup finely diced scallions
1/4 cup finely diced red bell pepper
1 teaspoon prepared horseradish
1 large egg white
2 teaspoons wasabi fumi furikake
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
4 onion buns
Kewpie mayonnaise, for serving (optional)

Steps:

  • If the char is frozen, thaw at room temperature for about 30 minutes before chopping. If it's raw, freeze for 30 minutes before chopping. Chop into 1/4-inch cubes and transfer to a medium mixing bowl.
  • Gently fold in the panko, scallions, bell pepper, horseradish, egg white, furikake, salt and pepper.
  • Divide the mixture into 4 portions and shape into 3/4-inch-thick patties. Cover and refrigerate for 30 minutes.
  • Over medium-high heat, heat the vegetable oil in a 12-inch seasoned cast-iron or other nonstick pan until the oil shimmers. Add the patties and cook for 4 minutes, or until lightly browned. Flip and cook for another 3 to 4 minutes.
  • Move the patties to a plate to rest for about 3 minutes, then serve on onion buns. Toasting the buns and adding a squeeze of the Japanese-style mayonnaise is optional but recommended.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the dish will be. This is especially true for the eggs, cheese, and pancetta.
  • Don't overcook the eggs: The eggs should be cooked until they are just set, but still slightly runny. Overcooked eggs will be tough and rubbery.
  • Use a large enough pan: The pan should be large enough to accommodate all of the ingredients without overcrowding.
  • Cook the pancetta until it is crispy: The pancetta should be cooked until it is crispy and browned. This will add flavor and texture to the dish.
  • Grate the cheese finely: The cheese should be grated finely so that it melts evenly.
  • Season to taste: Season the dish with salt and pepper to taste.
  • Serve immediately: Breakfast carbonara is best served immediately after it is cooked.

Conclusion:

Breakfast carbonara is a quick and easy dish that is perfect for a busy morning. It is also a delicious and satisfying meal that will keep you full until lunchtime.
