AMARETTO BALLS

We make these at Christmas time ... and my mom eats the first batch herself. Make a double batch from the start and save yourself the trouble. :-)

Time 15m

Yield 2 dozen, 12 serving(s)

Number Of Ingredients 5

2 cups pecans, very finely chopped
2 cups confectioners' sugar, sifted
2 cups chocolate wafers or 2 cups graham cracker crumbs
2/3 cup Amaretto
finely chopped pecans, to finish

Steps:

  • Crush pecans and wafers separately using a food processor to equal 2 cups of each.
  • Combine food processor with sugar.
  • Slowly pour in liqueur until mixture forms a ball. You might not need the whole amount.
  • If mixture gets too wet, put it in the refrigerator overnight without a cover.
  • Shape into small balls; roll in additional finely chopped pecans.
  • Store in tightly sealed container. In the refrigerator is best.

Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your amaretto balls will taste. Use real almond extract and good-quality chocolate.
  • Chill the dough before rolling: This will help the balls hold their shape better. If the dough is too warm, it will be sticky and difficult to work with.
  • Use a small cookie scoop to measure out the dough: This will help you get uniform-sized balls. You can also use a melon baller or a teaspoon if you don't have a cookie scoop.
  • Roll the balls in powdered sugar: This will help them look festive and prevent them from sticking together.
  • Store the amaretto balls in an airtight container in the refrigerator: They will keep for up to 2 weeks.

Conclusion:

Amaretto balls are a delicious and easy-to-make treat that are perfect for any occasion. You can find different variations of this recipe to suit your taste. With a little creativity, you can make amaretto balls that are unique and special. So next time you're looking for a sweet treat, give amaretto balls a try.
