CORN CAKE

A very yummy, quick and easy and NOT low-cal recipe I got from the MyFoodDiary.com forums. Different from cornbread. This is soft and served out of the pan with a spoon. Too soft to cut into squares and eat out of hand. Eat with a fork.

FRESH CORN CAKES

Corn's always been the basis of my favorite recipes-in fact, these corn cakes were one of the first things I made for my husband. For dinner, they're nice with fresh fruit salad and ham. They're also great with breakfast sausage and orange juice. Tom works for the highway department on Mount Hood, and we live at its base. Our children are 19, 16 and 13.

Provided by Stephanie Dodd

Categories     Cakes

Time 45m

Number Of Ingredients 12

1 can(s) cream style corn
1/2 c brown sugar, packed
3/4 c sugar
3 eggs
1 c canola oil
1 Tbsp baking powder
2 1/4 c flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 c raisins
1/2 c chopped nuts

Steps:

  • 1. In large bowl, combine corn and sugars. Add eggs and oil; beat until well blended. Combine dry ingredients; add to batter and mix well. Stir in raisins and nuts.
  • 2. Pour into greased 9 x 13" baking pan. Bake at 350 degrees for 30 - 35 minutes or until a toothpick inserted near the middle comes out clean. Cool.
  • 3. Frosting: 1/4 cup butter, 1/2 c. packed brown sugar, 1/4 c. milk, 2 - 3 cups powdered sugar. Bring butter and brown sugar to a boil over medium heat. Remove from heat. Stir in milk and powdered sugar until frosting is desired consistency. Frost cooled cake.

Tips:

  • Choose the right cornmeal: Use finely ground cornmeal for a smooth, delicate texture, or medium-ground cornmeal for a heartier, more rustic cake.
  • Use fresh or frozen corn: Fresh corn is best, but frozen corn can also be used. If using frozen corn, thaw it completely before adding it to the batter.
  • Season the batter well: Cornbread should be flavorful, so don't be shy with the salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or chili powder.
  • Bake the cornbread until a toothpick inserted into the center comes out clean: Cornbread should be cooked through but still moist. Overbaking will dry it out.
  • Serve cornbread warm: Cornbread is best served warm, but it can also be enjoyed at room temperature.

Conclusion:

Cornbread is a versatile and delicious bread that can be enjoyed in many different ways. It's perfect for serving with soup, chili, or stews, or it can be eaten on its own as a snack or breakfast. With its simple ingredients and easy preparation, cornbread is a great choice for beginner bakers and experienced cooks alike. So next time you're looking for a quick and easy bread to make, give cornbread a try. You won't be disappointed!
