1.5 cups orzo, uncooked
1 can (15oz) diced tomatoes with dried basil, garlic and oregano
6 oz feta, crumbled (about a cup)
1 big handful of fresh spinach
2 cups low sodium chicken broth
2 large chicken breasts, cubed
1 lemon, sliced
Garnish with parsley, cracked black pepper and more crumbled feta

Steps:

  • Preheat oven to 375F.
  • Cook orzo in a pot of boiling water for ~8 minutes. Once finished, drain in a mesh colander and rinse with cold water. Place it in a large bowl
  • In the same bowl as the orzo, add in feta, spinach and can of tomatoes. Mix to combine and pour into a casserole dish.
  • Pour 2 cups of chicken broth over orzo mixture in the casserole dish. Place pieces of chicken on top then add lemon slices on top of that.
  • Cover with aluminum foil or a lid and bake at 375F for 40 minutes.
  • Let the casserole sit for 5-10 minutes before consuming to allow juices to absorb into the orzo. The first time you serve it, use a slotted spoon. The juices will absorb in the fridge over time.

1 chicken, cut into portions
1 red onion, finely chopped
a glass of hot water
juice of 1 1/2 lemon
1 tbsp mustard
1 clove of garlic, chopped
6-7 peppercorns
5-6 tbsps olive oil
1 tsp dried oregano
salt and pepper to taste

Steps:

  • To prepare this Greek chicken casserole recipe, divide the chicken into 8 portions (leave the skin on), rinse and pat dry using a paper towel. Heat a large pan on medium high heat; add the olive oil and the chicken and sauté for 2-3 minutes on each side, until slightly coloured.
  • Into a small bowl add a glass of hot water, the mustard and the lemon juice and mix.
  • Pour into the pan along with the rest of the ingredients, put the lid on and turn the heat up. As soon as it comes to a boil turn the heat down and simmer for 50-60 minutes, until the chicken is cooked through and the sauce thickens.
  • Traditionally Greek chicken casserole is cooked without colouring, and looks more like boiled chicken. Personally I prefer it crispy. if you do too, after cooking the chicken, transfer into a hot pan and fry each side, just a little bit for that crispy skin flavour.
  • Serve with some basmati rice or potatoes. If you choose to serve with rice, lift up the flavor by adding 2-3 tbsps of the chicken juices into the boiling rice.

4 cups pasta, cooked and drained (approximately 2 cups uncooked); penne, cavatappi, or rigatoni works well
3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tablespoons flour
1/2 cup sour cream
1 cup milk
3 cups cheese, grated (cheddar, colby jack, Swiss, or a combination), with 1/2 cup reserved for sprinkling on top
1/2 teaspoon red pepper flakes
salt and black pepper to taste

Steps:

  • Preheat the oven to 350°F. Lightly grease the inside of a 9x13-inch baking dish. In a large skillet, melt the butter over medium heat and cook the onion and garlic until the onion is translucent, about 5 minutes, stirring occasionally. Add the flour and whisk together for about 1 minute, this will allow the flour to cook just a little before adding the other ingredients. Add the sour cream and milk, and continue whisking until the mixture has thickened. Remove from heat and add all but ½ cup of the cheese. Lots of garlic and other good spices, this looks like a certain winner to me. As a one dish meal, it works well as a midweek meal and be suitable for reheating leftovers. If you omit the feta, this dish is suitable for the WW Core Program or you can easily count the points.

2 cups chopped onions (about 1 large)
2 tablespoons dried thyme
1 -2 teaspoon black pepper

6 cups red potatoes, unpeeled cut into 1/2 inch cubes (about 2 pounds)
2 1/2 cups green beans, cut into 1 inch pieces (about 1/2 pound)
1/4 cup water
3 tablespoons finely chopped olives

4 medium plum tomatoes, cut in 1/4-inch cubes
1/4 cup red onion, coarsely chopped
1/4 cup kalamata olive, pitted and sliced
2 tablespoons olive oil
3 -4 teaspoons greek herbs, to taste (ground fennel, oregano, crushed dried mint leaves, thyme)
1 dash cinnamon
20 ounces frozen chopped spinach, thawed and drained
8 ounces feta cheese, crumbled
1 1/2 ounces parmesan cheese, grated
1/4 cup heavy cream
2 large eggs, beaten
1 1/2 lbs boneless skinless chicken breasts
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Place tomatoes, onions, and olives in a bowl. Season with salt, pepper, herbs, and a dash of cinnamon; drizzle with olive oil and toss to distribute evenly.
  • Reserve 1/4 cup of the crumbled feta, 1/4 cup of the grated Parmesan cheese, and 1/2 cup of the tomato mixture in separate dishes; set aside.
  • Combine eggs, cream, crumbled feta, and Parmesan cheese in a large bowl. Beat with an electric mixer or wire whisk until blended.

This might have to be the last recipe I post - I'm giving away all my sure-fire dinner party favourites and secrets'! I think this is another weight watchers recipe - not exactly sure of the source. It's again - easy and delicious -and pretty healthy. I often serve it with a mushroom risotto.

6 skinless chicken drumsticks
cooking spray
1 onion, cut into thin wedges
2 garlic cloves, crushed
100 ml dry white wine
400 g diced tomatoes
60 g olives (pitted and marinated)
1 tablespoon red wine vinegar
50 g prosciutto
1/2 cup chopped fresh flat-leaf parsley
60 g low-fat feta

Steps:

  • Preheat oven to 180°C.
  • Heat a large non-stick frying pan, coat the chicken with cooking oil spray and cook over medium heat until golden. (Alternatively - roast chicken in the oven until just cooked). Place in a casserole dish.
  • Coat the onion with cooking oil spray and cook over a low heat until soft.
  • Add the garlic and wine and bring to boil, then add the tomatoes, olives and vinegar and and heat through.
  • Pour over the chicken, cover and cook in the oven for 50 minutes or until the chicken is cooked and tender.
  • 10 minutes before the chicken is cooked, put the prosciutto on a baking tray and cook until golden and crisp -about 3-5 minutes.
  • Remove casserole from the oven and stir the parsley through.
  • Season to taste with salt and black pepper and crumble the prosciutto and feta over the top to serve.

This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

1 (16 ounce) package Pepperidge Farm stuffing (herb seasoned-blue package, see note above)
1/2-1 cup butter

2 tablespoons olive oil
2 garlic cloves, minced
1 onion, chopped
1 (19 ounce) can diced tomatoes, undrained
1 (7 1/2 ounce) can tomato sauce
1/4 cup dry white wine

1/4 teaspoon granulated sugar
1/4 teaspoon dried oregano
1 pinch black pepper
1 cup elbow macaroni
12 kalamata olives, sliced
1/2 lb feta cheese, rinsed and crumbled
