BACON-WRAPPED ASPARAGUS
While asparagus season is here, keep this recipe near. It's a pretty and impressive side perfect for brunch or dinner-maybe alongside a steak! And it's a godsend when entertaining, since it's made with only five ingredients, a single pan and the simplest of techniques. The trick is wrapping bundles of asparagus, instead of individual stalks. As the bundles bake, the bacon drippings infuse the stalks with smoky flavor and transform this sometimes-woody vegetable into a silky smooth and meltingly tender masterpiece which, in our experience, no one can resist!

Steps:
- Rinse and cut the asparagus to about 4 inch tips, then toss asparagus in large mixing bowl with EVOO, salt/pepper, garlic, and onion powder
- Cut the bacon package in half to make the pieces skinnier. Then wrap the bacon tightly from the tip, leaving as little green as possible
- Lay on nonstick cookie sheet with the free end of the bacon down and add fresh cracked pepper to the bacon. Broil on the bottom rack in the oven.
- Broil on bottom rack until bacon starts to brown and sizzle (about 5-7 minutes) flip all pieces over gently with tongs and repeat (5 more minutes)
- Remove from cookie sheet and lay on paper towels to remove excess grease
- Very lightly drizzle a little bit of syrup over the asparagus after arranging on a platter... ENJOY!!
Tips:
- For a crispier bacon wrapping, cook the bacon until it's almost done before wrapping the asparagus.
- To prevent the bacon from falling off, use toothpicks or skewers to secure it.
- If you don't have maple syrup, you can use honey or brown sugar as a substitute.
- To add a little extra flavor, sprinkle some garlic powder, onion powder, or paprika on the asparagus before wrapping it in bacon.
- If you're using thick asparagus spears, you may need to blanch them for a few minutes before wrapping them in bacon.
- Serve the asparagus immediately after it's cooked, while the bacon is still crispy.
Conclusion:
Maple bacon-wrapped asparagus is a delicious and easy-to-make appetizer or side dish that's perfect for any occasion. The combination of sweet and savory flavors is sure to please everyone at your table. With just a few simple ingredients, you can create a dish that's both impressive and delicious.
