Number Of Ingredients 2

2 cup(s) pancake mix
1 cup(s) whole kernel corn (drainned well)

Steps:

  • MAKE PANCAKES ACCORDING TO PKG DIRECTIONS. I AM GOING TO USE BAKING MIX (THE ONES I HAD WERE FIRM). ADD IN CORN AND FRY ON A LIGHTLY GREASED GRIDDLE. COOK FOR TILL BUBBLES FORM AND FLIP. SERVE WITH MAPLE SYRUP OR PANCAKE SYRUP.

Tips:

  • Use fresh corn kernels for the best flavor. Frozen corn can also be used, but be sure to thaw it completely before using.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Be sure to heat your griddle or skillet over medium heat before cooking the fritters. This will help them cook evenly and prevent them from sticking.
  • Don't overcrowd the griddle or skillet when cooking the fritters. Leave enough space between each fritter so that they can cook evenly.
  • Cook the fritters for 2-3 minutes per side, or until they are golden brown and cooked through.
  • Serve the fritters hot with your favorite toppings, such as butter, syrup, or fruit.

Conclusion:

Amish corn fritters are a delicious and easy-to-make breakfast or brunch dish. They are perfect for using up leftover corn, and they can be served with a variety of toppings.
