  • 1. Chocolate Covered Cherries Variation I like making "Chocolate Covered Cherries" version of the Amish Friendship Cake (Bread - AW). It's great for people who always wanted to make the candy version, but couldn't pull it off. You use Cherry Jello instead of Pudding Mix. You use Marichino Cherry Juice instead of Vanilla Extract. You add 1/2 cup Marichino Cherries and 1/2 cup mini-chocolate chips. I don't use nuts for this one. I like to make this as a Bundt Cake topped with chocolate glaze and garnished with marichino cherries on the top. For Glaze (I never measure when I make glaze, I'm estimating here): about 1 tbsp cocoa powder, 1 or 2 cup confectioners sugar, 1-2 tbs marichino cherry juice and milk (as needed for consistency).
  • 2. Cherry Cheese Cake Variation This is wonderful. I used the basic mix, omitted the cinnamon and used two small boxes of cheese cake pudding instead of the vanilla and I added a small pack of cream cheese and 1/4 cup more milk. You also need a can of Cherry pie filling , 1/2 can per loaf. After putting the batter into the pans dab teaspoons of cherries on top of them and swirl around with spoon to mix in the cherries. Cook at 325 until dark golden brown. This is my brother-in-law's favorite and is very moist. I also found out that if you put the bread in a ziplock bag before it is totally cooled, the bread will be more moist. I love the many ways you can make this bread.
  • 3. Cherry-Pistachio Variation Instead of large vanilla pudding use 2 small boxes of pistachio pudding. Omit cinnamon and add cup maraschino cherries, chopped with 2 tablespoonfuls of syrup from cherries. Reduce milk by 2 tablespoonfuls. Sprinkle baking pans with plain sugar. Note: This makes great finger tea sandwiches when spread with softened cream cheese!

Add 1/4 cup poppyseed. ~~~or~~~ Lemon-Poppyseed Friendship Bread Use two small pkgs. of lemon pudding rather than the vanilla and lemon flavoring in place of vanilla flavoring. Add one tablespoon of poppyseed. This is excellent for making lemon-poppyseed muffins. ~~~or~~~ Lemon Coconut - Delete cinnamon, nuts and vanilla. Use lemon flavored pudding, add 1-tsp. lemon extract and 2 cups coconut. ~~~or~~~ Lemon Walnut Friendship Bread: Omit Cinnamon, Vanilla Pudding in basic recipe and add 1 teaspoon lemon extract, 1 package lemon pudding and one cup of chopped walnuts. ½ teaspoon vanilla

Miscellaneous Variations Apple caramel bread ~ make Friendship Bread with dried apples and caramel instant pudding (makes it like caramel apples). ~~~or~~~ Last night I tried 3/4 cup white chocolate chips, 3/4 cup macadamia nuts and used cheesecake pudding. Delicious!!! ~~~or~~~ Substitute 2 tablespoons molasses for equal amount of sugar and add spices to make gingerbread. ~~~or~~~ throw in a box of chopped dates and a cup of chopped pecans. Then, instead of using two loaf pans, I bake it in a bundt pan. ~~~~or~~~ add 1 cup of drained crushed pineapple, 1 cup shredded coconut and pistachio pudding (instead of vanilla). 1 (.25 ounce) package active dry yeast
¼ cup warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk

  • In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.

5 cups all-purpose flour
4 3/4 cups sugar
3 1/2 cups milk
1 cup vegetable oil or 1/2 cup vegetable oil and 1/2 cup applesauce
3 large eggs
1 teaspoon pure vanilla extract
1 1/2 tablespoons baking powder
4 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon baking soda
1 package (3.4 ounces) instant vanilla pudding
1 cup chopped walnuts or pecans (optional)

Steps:

  • To prepare starter: Place 1 cup flour, 1 cup sugar, and 1 cup milk in a 1-gallon resealable plastic bag. Seal bag and knead mixture until well combined. Let stand at room temperature overnight.
  • For the next 4 days, continue kneading mixture once a day; keep at room temperature. On the sixth day add 1 cup flour, 1 cup sugar, and 1 cup milk to bag. Seal and knead to combine; let stand at room temperature overnight.
  • For the next 3 days, knead mixture twice a day. On the 10th day, transfer mixture to a large bowl. Add 1 cup flour, 1 cup sugar, and 1 cup milk; mix until well combined. Measure 1 cup of the mixture into each of 3 resealable plastic bags. Seal plastic bags and give each bag of starter mixture to a friend to make their own friendship bread.
  • To make bread: Preheat oven to 330 degrees. Add oil to bowl with remaining starter mixture along with eggs, remaining 1/2 cup milk, and vanilla extract. Stir until well combined; set aside.
  • In another large bowl, mix together remaining 2 cups flour, 1 cup of sugar, baking powder, 2 teaspoons cinnamon, salt, baking soda, pudding, and nuts, if desired. Add dry ingredients to starter mixture and stir until well combined. Divide batter evenly between two 8-by-4-by-2 1/2-inch loaf pans.
  • In a small bowl, mix together remaining 3/4 cup sugar and 2 teaspoons cinnamon; sprinkle evenly over batter. Transfer to oven and bake for 1 hour. Let cool 15 minutes before removing from the pan.
