Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.

Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Add the drained macaroni to the cheese sauce and mix thoroughly.

Tips:

  • Use high-quality ingredients. Freshly grated cheese, real butter, and high-quality macaroni will make a big difference in the flavor of your dish.
  • Cook the macaroni al dente. This means that it should be cooked through but still have a slight bite to it. Overcooked macaroni will make your dish mushy.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken sauces. It will help to give your macaroni and cheese a creamy, smooth texture.
  • Season the dish well. Salt and pepper are essential, but you can also add other spices to taste. Garlic powder, onion powder, paprika, and cayenne pepper are all good options.
  • Don't overcook the macaroni and cheese. Once the cheese has melted and the dish is hot and bubbly, remove it from the heat. Overcooking will make the cheese tough and rubbery.

Conclusion:

Amish macaroni and cheese is a delicious and comforting dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Follow these tips and you will be sure to make a macaroni and cheese that everyone will love.
