2 1/2 lbs broiler-fryer chickens, cut up
1/2 cup butter, melted
1/3 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme

  • Bake 50-60 minutes or until golden brown.

Tips:

  • Use a whole chicken for a more flavorful dish. If you're using chicken breasts or thighs, be sure to season them generously with salt and pepper before baking.
  • Roast the chicken on a bed of vegetables, such as onions, carrots, and celery. This will help to create a flavorful sauce and keep the chicken moist.
  • Baste the chicken with butter or olive oil every 20 minutes or so. This will help to keep the chicken skin crispy and prevent it from drying out.
  • Roast the chicken until the internal temperature reaches 165 degrees Fahrenheit. You can check the temperature by inserting a meat thermometer into the thickest part of the chicken.
  • Let the chicken rest for 10 minutes before carving. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.
