AMISH OVEN-FRIED CHICKEN
This is a great way to "fry" that chicken without all of the splatter on top of the stove. A good recipe, and I think it is good cold too.

AMISH OVEN-FRIED CHICKEN
Another wonderful and delicious recipe from one of my Amish cookbooks (the Amish are really great cooks). Besides bone-in chicken pieces, you can also use boneless, skinless chicken breasts; I've also used these and they turned out great!

Steps:
- Place oil and butter in a big jellyroll pan. Put in preheated 375 degree oven. Mix flour and seasonings in a big paper bag or mixing bowl. Remove pan with oil and butter in it as soon as the butter is completely melted. Roll chicken pieces in the butter mixture and then dredge in the flour mixture. Once all of the chicken pieces are coated, place them skin-down on the jellyroll pan. Bake at 375 degrees F. for 45-50 minutes. Turn chicken pieces over and bake for another 10 minutes, or until chicken is browned well, crispy and bubbly. Use pan drippings to make gravy for mashed potatoes, fries or biscuits. Serve chicken hot or cold. Perfect for a picnic!
Tips:
- For a crispier coating, double-coat the chicken in the flour mixture.
- Use a heavy-bottomed skillet or Dutch oven to prevent the oil from splattering.
- Maintain a consistent oil temperature of 350°F (175°C) to ensure even cooking.
- Do not overcrowd the pan when frying the chicken to avoid soggy coating.
- Use a meat thermometer to ensure the chicken is cooked through to an internal temperature of 165°F (74°C).
- Allow the chicken to rest for a few minutes before serving to redistribute the juices.
- Serve the chicken with your favorite sides, such as mashed potatoes, gravy, cornbread, or coleslaw.
Conclusion:
Amish oven-fried chicken is a delicious and easy-to-make dish that is perfect for any occasion. With its crispy coating and tender, juicy meat, this chicken is sure to be a hit with your family and friends. So next time you're looking for a satisfying and flavorful meal, give this recipe a try – you won't be disappointed!
