Yield 8 2 lbs Salmon

Number Of Ingredients 11

2 Ancho chiles
1 tbs cumin seeds
1tbs fennel seeds
4 1/2/ tsp coriander seeds
1 Tbs whole black peppercorns
1 Tbs dried thyme leaves
1 tbs dried oregano leaves
1 1/2 oz kosher salt
1 tbs dry mustard
Salmon
1 1/2 oz clarified butter or good olive oil(not virgin)

Steps:

  • Rough chop chiles (remove stems and seeds),toast chiles,cumin,fennel, and coriander until fragrant cool to room temp,Grind in spice grinder until course powder,mix with mustard and salt Coat Salmon let rest 30 min. Saute in oil ,roast or grill on cedar plank
