This recipe also came to me from Amish country. Had this at an old church in rural northern Ohio. We love to have this in a bread bowl at home! Add cooked vegetables such as celery or broccoli, if you like.

AMISH POTATO SALAD
This is like the potato salad I grew up with in Pennsylvania Dutch country. This has a sweet and sour dressing and is distinctively yellow.

Steps:
- Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
- While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
- Peel the potatoes if desired, and cut into medium dice. Place in a large bowl, and toss with the onion, celery, carrots, celery seed and hard-cooked eggs. Gently fold in the dressing. Refrigerate until serving. I personally like this to sit for at least a day before serving to let the flavors blend, but you may serve it as soon as it is chilled.

POTATO SOUP WITH RIVELS
This was my grandmother's recipe and I am pretty certain it was passed down through the generations from Amish roots. For added flavor, chopped onions and bits of ham can be added with the potatoes and ham broth may be substituted for the water.

Steps:
- Cover the bite-sized potato cubes with cold, salted water.
- Bring to a boil over high heat and then turn down the heat to a simmer and cook until done (about 15 minutes).
- Pour the flour into a bowl and form a well (indentation) in the center.
- Beat the eggs together and pour them into the flour well.
- Pinch the flour, 1/2 teaspoon salt and egg together and the mixture will start to separate in to pellets.
- Drop the pellets into the boiling cooked potatoes.
- Simmer an additional 10 minutes or until the rivels (formerly known as pellets) are cooked through.
- Add the milk to the soup and heat through (do not boil).
- Season to taste.
Tips:
- Yukon Gold potatoes are recommended for this soup as they hold their shape well and have a creamy texture when cooked.
- Use a good quality chicken broth for the best flavor. You can also use vegetable broth if you prefer.
- Don't be afraid to add more vegetables to the soup. Some good options include carrots, celery, and peas.
- Season the soup to taste with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
- If you want a thicker soup, you can add a cornstarch slurry towards the end of cooking. To make a cornstarch slurry, whisk together equal parts cornstarch and water until smooth. Then, slowly add the slurry to the soup, whisking constantly until the desired consistency is reached.
- Serve the soup hot, garnished with fresh parsley or chives.
Conclusion:
Amish potato soup is a hearty, flavorful soup that is perfect for a cold winter day. It is easy to make and can be customized to your own preferences. Whether you like it thick or thin, with or without vegetables, Amish potato soup is sure to be a hit with your family and friends.
