My husband's ancestors were Amish and Mennonite. This delicious recipe is adapted from an old Amish recipe, but made in the bread machine.

2 ¾ cups bread flour
¼ cup canola oil
1 teaspoon active dry yeast
¼ cup white sugar
½ teaspoon salt
18 tablespoons warm water

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select White Bread cycle; press Start.
  • When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

This is my favorite home baked bread recipe. I got it from an Amish cookbook years ago and no other bread recipe I have tried beats it. It is a standard in our house with beef stew.

1/4 ounce dry yeast
1/2 cup water
1/3 cup sugar
2 teaspoons salt
2 cups water
2 1/2 tablespoons shortening
6 -7 cups all-purpose flour or 6 -7 cups bread flour
1/8-1/4 cup butter

Steps:

  • Dissolve yeast in 1/2 cup warm water.
  • In large bowl, combine sugar, salt, 2 cups water and shortening.
  • Stir in yeast mixture.
  • Gradually add flour to form a soft dough.
  • Turn onto floured surface and knead until smooth.
  • Place in a greased bowl and cover and let rise for about 2 hours.
  • Punch down and divide into 2 portions and form loaves.
  • Place in greased 9 x 5 loaf pans and prick tops with fork.
  • Let rise until higher than pans (about 2 hours).
  • Bake at 375 degrees for 25 to 30 minutes.
  • Cool for ten minutes.
  • Rub butter all over tops of loaves.
  • Place pans on sides until loosened.
  • Remove bread from pans and cool completely on racks.

2 scant Tbs. active dry yeast, mixed with 1 Tbs. flour and 1 Tbs. sugar
2 c. warm water (about 110°)
1/3 c. sugar
1/2 c. oil or chicken fat
1/2 c. mashed potatoes or 1/4 c. instant potato flakes mixed with 1/4 c. water
2 tsp. salt
5 1/2 - 6 1/2 c. white bread flour or all-purpose flour

Steps:

  • Mix 1 Tbs. flour, 1 Tbs. sugar, and yeast in your KitchenAid mixing bowl.
  • Add warm water. Stir, and let it rest for about 5 min.
  • Once the yeast mixture is looking creamy and bubbly, add the oil, sugar, potatoes, and salt. Stir.
  • Add 4 c. of flour and knead on low speed.
  • Continue kneading for 4 minutes on speed 2, slowly adding flour until the dough pulls away from the sides of the bowl.
  • When finished kneading, the sides of the bowl should be looking fairly clean. Drizzle a bit of oil into the side of the bowl and let the mixer spread the oil to grease the sides.
  • Lightly cover the dough with a dish towel, and let it rest to rise for about an hour.
  • Grease 2 9x5" loaf pans.
  • Punch dough down. Butter your hands and knead the dough for about a minute. Divide the dough in half and shape it into two loaves. Poke the tops with a fork to remove air bubbles.
  • Place loaves into greased pans. Cover with a towel and allow them to rise for about 30 minutes, or until they have risen about 1 inch above the pans.
  • Preheat your oven to 350°. Bake for 30 - 35 minutes.
  • Allow the bread to cool for about 10 minutes, brush the tops with butter, and remove from the pans. Enjoy a delicious slice of warm fresh bread!
  • Store in airtight bags. And you can freeze one loaf to keep it fresh.

2 cups warm water (110 degrees F/45 degrees C)
⅔ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons salt
¼ cup vegetable oil
6 cups bread flour

Steps:

  • In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  • Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.

2/3 cup white sugar
1 1/2 tablespoons yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups flour
4 tablespoons butter (melted)

Steps:

  • Places warm water and sugar in mixing bowl, mix to dissolve.
  • Add yeast dissolve in sugar water, let stand 5-15 mins till bloomed.
  • Add salt, oil, and half the flour and mix.
  • Add remaining flour, use dough hook. Mix til dough pulls away from the sides of the bowl.

  • Place in greased bowl, flip to cover both sides.
  • Cover with warm damp towel.
  • Set in warm place, let rise till double in size. About an hour.
  • Remover towel and punch down.
  • Lay out on lightly floured surface, cut in half.
  • Flatten out into rectangle and "jelly roll" into loaf and pinch ends. Repeat with second half.
  • Cover and let rise 30-50 mins til doubled in size.
  • Preheat over to 350 degrees.
  • Bake 25-30 mins til brown.
  • Pull out and brush with melted butter.
  • Let rest 10 mins on cooling rack before removing.
