1/4 cup ( 1/2 stick) unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon paprika

Pinch of cayenne pepper
Coarse salt
2 tablespoons sherry
1 1/4 cups heavy cream
2 dozen shucked fresh oysters
8 ounces angel-hair pasta
1/4 teaspoon finely grated orange zest
2/3 cup strained oyster liquor

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat oil in a large saucepan over medium-high heat. Add chorizo. Cook, stirring, until crisp, about 3 minutes. Transfer to a plate lined with paper towels, and let drain. Wipe out pan.
  • Melt butter in pan over medium heat. Add flour, spices, and 1 teaspoon salt. Cook, whisking constantly, 3 minutes (do not brown). Add sherry, and cook, whisking, 1 minute. Whisk in cream and oyster liquor. Bring to a simmer, and whisk until thick, about 3 minutes.

6 green onions, chopped

1/2 lb button mushroom, quartered
2 teaspoons paprika
1/2 teaspoon salt

3 medium tomatoes, peeled, seeded and chopped
1 large green bell pepper, diced
3 cups canned chicken broth
1/2 cup dry white wine
1/2 cup cream or 1/2 cup half-and-half
3/4 lb spicy chorizo sausage, cut into 1/2 inch thick rounds
1 lb angel hair pasta
minced fresh parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Heat oil in deep skillet over medium-high heat.
  • Add onions and garlic and cook until tender, about 8 minutes.

3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

Steps:

  • Pour the oil into a large pan (a wok is the best option) and sauté the onion, garlic and mushrooms until the onion is translucent, the garlic is cooked (but not brown) and the mushrooms are just about cooked.
  • Add the chorizo and tinned tomatoes; simmer for 5 minutes
  • Whilst the sauce is cooking add your pasta to very salted boiling water (the Italians say the water should be as salty as the Mediterranean Sea).
