1/2 pound slab bacon, thickly sliced and chopped into 1/2-inch dice
2 (32-ounce) cans baked beans
1/2 cup ketchup
1/3 cup brown sugar
2 tablespoons hot pepper sauce
2 tablespoons honey

Steps:

  • In a heavy pot or Dutch oven, add the chopped bacon and cook over medium heat just until the fat begins to render, about 4 minutes. Add baked beans, ketchup, brown sugar, hot pepper sauce, and honey and bring to a simmer over medium heat. Reduce the heat slightly to maintain a simmer for 25 to 30 minutes, or until flavors are combined.

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

1 can pork and beans, undrained
1 can butter or lima beans, undrained
1 can dark red kidney beans, partially drained
1/2 lb. bacon, cut into about 3/4" pieces
1 small onion, chopped
1/2 - 1 c. brown sugar
1 c. ketchup
1 tsp. mustard
1/2 - 1 tsp. smoked paprika

Steps:

  • Preheat oven to 350°.
  • Cut the bacon into pieces and cook until lightly browned. You can leave all the grease in the pan, or remove some of it (for health's sake).
  • Add the chopped onions and cook a few more minutes.
  • Add the brown sugar, ketchup, mustard, and paprika. Mix.
  • Drain some of the juice from one can of beans and add all the beans and liquid from two cans. Mix.
  • Bake, uncovered, for one hour. Stir and serve.
  • Leftovers can be refrigerated for up to 5 or 6 days.
  • Or place cooled leftover beans into airtight containers and freeze them for later use. Thaw overnight in the refrigerator and reheat.

½ pound bacon, cut into bite-sized pieces
2 (28 ounce) cans baked beans, undrained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans, drained
1 medium onion, chopped
½ cup dark brown sugar
½ cup white sugar
½ cup ketchup
2 tablespoons dark molasses
1 ½ teaspoons dry mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
