Yield 6 small meatloaf cakes (3 to 6 servings).

Number Of Ingredients 11

1 1/2 pounds ground beef
4 slices bread, crumbled into small pieces, or 3/4 cup dried bread crumbs
1 large egg
1/4 cup chopped onion
1/4 cup lemon juice
2 teaspoons seasoned salt
1/4 cup ketchup
1/4 cup brown sugar

ORIGINAL ANN LANDERS MEATLOAF

Original Ann Landers Meatloaf image

This is the original version my mom handed down to me and has been one of my family staples since the 70s. I occasionally add other ingredients such as bell pepper or fresh onions, or top with bacon or cheese slice triangles. Sometimes I substitute saltine cracker crumbs to give it a different texture. My favorite part is meatloaf sandwiches from the leftovers.

Yield 1 Loaf

Number Of Ingredients 8

Tips:

  • Use a combination of ground meats. This will give your meatloaf a more complex flavor and texture. A good ratio is 1 pound of ground beef, 1/2 pound of ground pork, and 1/4 pound of ground veal.
  • Don't overmix the meatloaf mixture. Overmixing will make the meatloaf tough. Mix just until the ingredients are combined.
  • Add some moisture to the meatloaf mixture. This will help keep the meatloaf moist and juicy. You can add moisture by using eggs, milk, bread crumbs, or vegetables.
  • Season the meatloaf mixture well. Use a variety of herbs and spices to give your meatloaf flavor. Some good choices include salt, pepper, garlic powder, onion powder, paprika, and chili powder.
  • Bake the meatloaf at a high temperature. This will help create a crispy crust on the meatloaf. Bake the meatloaf at 375 degrees F for 1 hour, or until the internal temperature reaches 160 degrees F.
  • Let the meatloaf rest before slicing. This will help the meatloaf hold its shape and make it easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. By following these tips, you can make a delicious and moist meatloaf that will be a hit at your next meal.
