This was the recipe I created the very first time I cooked fish. Very simple but delicious. So far this recipe has converted three non-fish eaters to eat fish! Use any flaky white fish or even chicken and serve with couscous and fresh veggies.

4 mahi mahi or 4 tilapia fillets
1/3 cup olive oil
1 lemon, juice of
1/2-2/3 cup Italian style breadcrumbs
1/2-2/3 cup grated parmesan cheese
1 -2 teaspoon dried dill weed
1 -2 teaspoon dried rosemary, crushed in fingers or 2 tablespoons fresh rosemary
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Whisk together olive oil and lemon juice in bowl big enough to dip fish into.
  • Mix breadcrumbs, parmesan, dill, rosemary and salt and pepper in another bowl of similar size.
  • Dip each filet in olive oil mixture, then coat with breadcrumb mixture and place in 9x13 inch glass dish.
  • Top each filet with 2-3 dollops butter.
  • Bake for about 15 min or until fish flakes easily with fork.

2 (4 ounce) fillets mahi mahi
2 teaspoons olive oil
½ cup salted butter
1 clove garlic, minced
1 tablespoon lemon juice
2 drops Louisiana-style hot sauce, or to taste
1 roma tomato, seeded and chopped
1 green onion, chopped

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Rub the mahi mahi fillets with the olive oil and lay into a baking dish.
  • Bake in the preheated oven until the fish flakes easily with a fork, about 20 minutes.
  • While the mahi mahi bakes, melt the butter in a saucepan over medium heat.
  • Stir the garlic, lemon juice, and hot sauce into the melted butter; simmer together for 1 minute. Add the tomato and green onion to the butter mixture; cook and stir until hot. Spoon over the baked fish to serve.

This wonderful and easy recipe was given by a friend who recommended using skirt steak; I have adapted it to work with any cut of steak, even a cheap chuck steak. In other words, it works whatever your budget is. Most of the work can be done in advance; just save the last 30 minutes of baking for before serving. I have been told that this reheats well, but we've never had enough leftover to know.... Using scallions here is the key to the recipe; do not substitute other onions. That said, you can use absolutely any type of barbecue sauce since they all work well.

1 beef steak, 1 per person
fresh minced garlic or garlic granules, to taste
1 bunch scallion, chopped
