1 pound sausage
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
½ cup chopped black olives, drained
1 cup Ranch-style salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.
  • Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool. Remove from the pan.
  • In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture.
  • Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 package (8 ounces) cream cheese, softened
1/2 cup crumbled feta cheese
2 large eggs, lightly beaten
1/4 cup finely chopped onion
1/4 cup mayonnaise
2 tablespoons snipped fresh dill
3/4 teaspoon seasoned salt
1/4 teaspoon pepper
15 sheets phyllo dough (14x9-inch size)
1/2 cup butter, melted
Optional: Tzatziki sauce, lemon wedges and fresh dill sprigs

Steps:

  • Preheat oven to 425°. In a large bowl, mix the first 9 ingredients. Place 1 sheet of phyllo dough on a work surface; brush with butter. Layer with 2 additional phyllo sheets, brushing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.), Arrange 3/4 cup spinach mixture in a narrow row along the long end of phyllo to within 1 in. of edges. Fold bottom edge of phyllo over filling, then roll up. Brush end of phyllo dough with butter and press to seal. Repeat 4 times with phyllo sheets, butter and the spinach mixture. Place rolls on a parchment-lined 15x10x1-in. baking pan, seam side down., Cut rolls diagonally into 2-in. pieces (do not separate). Brush tops with remaining butter. Bake until golden brown, 12-15 minutes. 20 thin slices sandwich bread, crusts removed
¾ pound butter
4 ounces blue cheese, at room temperature
1 (8 ounce) package cream cheese, at room temperature
1 egg, beaten
20 fresh asparagus spears

Steps:

  • Trim crusts from bread, and flatten slightly with a rolling pin.
  • In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
  • Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
  • To serve, preheat oven to 400 degrees F (205 degrees C).
  • Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

2 frozen puff pastry sheets (from a 17.3-ounce box), thawed
Three 1-inch long cornichons, halved length-wise
Six 1-inch square pieces ham steak (about 1 1/2 ounces)
1 1/2 ounces shredded gruyere cheese (about 1/2 cup)
18 mozzarella pearls
3 teaspoons prepared pesto
18 slices sun-dried tomatoes, from 3 to 4 tomatoes
6 whole candied pecans
6 small red grapes, halved
Six 1-inch square pieces brie cheese, about 1/2-inch-thick (about 1 ounce)
Kosher salt and freshly ground black pepper
1/4 cup cream cheese, at room temperature
1 scallion, thinly sliced
Zest of 1 medium lemon (about 1 teaspoon)
Six extra-small (91/110) cooked shrimp, tails removed
1 large egg, beaten

Steps:

  • Lightly flour a work surface and roll out both puff pastry sheets into 12-inch squares. Lay half of 1 piece of pastry over a 12-compartment ice cube tray (the remaining half of the pastry will hang off the tray) then gently use the back of your fingers (or the handle of a wooden spoon) to press the dough down into each compartment of the tray. Repeat with the remaining pastry and tray.
  • Fill 6 of the ice cube compartments in the same row each with 1 piece of cornichon, 1 piece of ham and 1 tablespoon gruyere cheese. Fill the next 6 ice cube compartments in the same row each with 3 mozzarella pearls, 1/2 teaspoon pesto and 2 slices sun-dried tomatoes. Fill the next 6 ice cube compartments in the same row each with 1 candied pecan, 2 red grape halves, 1 piece of brie and a pinch of black pepper. Stir together the cream cheese, scallion, 1/2 teaspoon lemon zest and a pinch of salt and pepper in a small bowl and stir until completely combined. Fill the last 6 ice cube compartments in the same row each with 1 shrimp then a spoonful of the cream cheese mixture.
  • Brush the edges of the puff pastry with the beaten egg then fold the puff pastry over the ice cube tray so that it completely covers the filling. Cut the excess puff pastry from around the upper edges of the ice cube trays then use your fingers to press the dough together so that it is sealed. Put the ice cube trays in the freezer for 15 minutes.
  • Position a rack in the center and preheat the oven to 400 degrees F.
  • Use your fingers to gently loosen the puff pastry from the ice cube trays then flip out onto a cutting board. Use a knife to trim the edges of the dough to 1/4-inch-wide. Cut in between each ice cube compartment to free each filled compartment. Use a fork to crimp the edges of all the ice cube bites, making sure to keep the flavors separate.
  • Line a large baking sheet with parchment. Put the ice cube bites on the baking sheet, keeping the flavors separate). Brush the beaten egg on top of the puff pastry then sprinkle the ham bites with the remaining gruyere cheese, lay a slice of sun-dried tomato on top of the pesto bites, sprinkle black pepper on the brie bites.
  • Bake, rotating the baking sheet about halfway, until the bites are puffed and golden brown, about 25 minutes.
  • Cool for 5 minutes on the baking sheet then transfer to a serving platter. Top the shrimp bites with the remaining lemon zest.

Mini-Reuben Appetizers image

These are great little appetizers and so easy to make. Prepare in advance and pop in the oven just before serving.

1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing

Steps:

  • Drain sauerkraut.
  • Place coctail ryes on cookie sheet in single layer.
  • Carefully place corn beef on each slice of rye.
  • Add 1 tablespoon saurerkraut on top of corn beef.
  • Squeeze a dash of thousand island dressing on top of saurkraut.
  • Top with swiss cheese.
  • Preheat oven to 350 degrees.
  • Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

1/2 pound bulk Italian sausage
3 green onions, chopped
16 wonton wrappers
1 tablespoon olive oil
1 cup shredded pepper Jack cheese

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink; drain if necessary. Stir in onions; set aside. , Press wonton wrappers into greased miniature muffin cups; lightly brush with oil. Bake at 350° for 6-7 minutes or until golden brown. , Spoon 1 rounded tablespoon of sausage mixture into each cup; top with 1 tablespoon of cheese. Bake 3-4 minutes longer or until cheese is melted. Serve immediately.

1 pound part-skim mozzarella cheese
2 eggs, beaten
2/3 cup all-purpose flour
3/4 cup seasoned bread crumbs
1 garlic clove, minced
1 tablespoon plus 1/4 cup olive oil, divided
1 can (28 ounces) Italian crushed tomatoes
1 teaspoon dried oregano
2 teaspoons sugar
1/4 teaspoon dried basil
1/8 teaspoon pepper

Steps:

  • Cut cheese into twenty-four 1/4-in. slices. Place the eggs, flour and bread crumbs in separate shallow bowls. Dip cheese slices in eggs, then coat with flour. Dip cheese again in eggs and coat with crumbs. Place on waxed paper-lined baking sheets; refrigerate for at least 1 hour., Meanwhile, in a small saucepan, saute garlic in 1 tablespoon oil for 1 minute; add the tomatoes, oregano, sugar, basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40-45 minutes or until slightly thickened., In a large skillet, cook cheese slices in remaining oil over medium heat for 30-60 seconds on each side or until golden brown. Drain on paper towels. Serve with sauce.
