1 apple, such as Empire or Braeburn, cored and chopped
2 tablespoons unsalted butter
2 tablespoons pure maple syrup, plus more for serving
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons water
1 cup old-fashioned rolled oats
2 cups water
Chopped toasted pecans, for serving

Steps:

  • In a saucepan, heat apple, butter, maple syrup, cinnamon, salt, and 3 tablespoons water over medium-high until simmering. Cover and cook until apples are tender, about 5 minutes. Reserve 1/2 cup apple mixture for garnish.
  • Add oats and 2 cups water to saucepan with remaining apple mixture and simmer, uncovered and stirring occasionally, until oats are creamy, about 5 minutes.
  • Serve with reserved apple mixture, pecans, and more maple syrup, if desired.

We have tried adding bananas too but they are best just sliced on top of the porridge, not cooked along with the oats.

2 cups porridge oats (not instant)
3 cups water
1 large apple, peeled and sliced

Steps:

  • Put the water in a large saucepan and boil.
  • When boiling, pour in the porridge and stir for 1-2 minutes.
  • At this point you should really turn the heat down while stirring but if your stove does not simmer so well, then just lift the pot away from the heat for a few seconds periodically.
  • After a minute, put in the apple slices and continue to stir for a further 30-45 seconds.
  • The porridge should be thickening up by this point. If not, keep it on the heat a little longer.
  • Take the pot off the heat, cover the porridge and set aside for a couple minutes.
  • Serve, with any extras you might have to hand like a bit of brown sugar if you are lucky or some honey drizzled over.
  • You could also replace up to half of the water with milk while you are cooking the porridge for a creamier version.

200g cranberry (fresh or frozen)
1 tsp mixed spice
5 tbsp caster or granulated sugar
200g porridge oat
1l whole milk
1 tsp vanilla extract

  • Put the apples in a pan with 100ml water and cook gently until almost softened. Turn up the heat. Add the cranberries, mixed spice and 3 tbsp of the caster or granulated sugar and bubble until saucy. You can make this a day before serving.
