1 large or 2 small regular or gluten-free baguettes (1 pound total), cut into 1-inch cubes
8 slices Jones Dairy Farm Dry Aged Cherry Hardwood Bacon, chopped
3 leeks, white portion only, sliced in half, washed, and chopped
2 celery ribs, chopped
1 large shallot, chopped
Salt and pepper to taste
2 cloves garlic, minced
1/4 cup butter
2 apples, peeled, cored and chopped
1 tablespoon fresh sage, chopped
1/2 cup dried cherries or cranberries
2 - 2-1/4 cups chicken broth

Steps:

  • DIRECTIONS Preheat oven to 350°F. Spray 9x13" baking dish with nonstick spray and set aside. Place baguette cubes onto 2 baking sheets; bake until golden brown, 15-20 minutes, rotating pans halfway through. Remove from oven; let cool completely on baking sheet. Meanwhile, heat large skillet over medium heat and cook bacon until crisp. Remove to paper towel-lined plate to drain then remove all but 2 tablespoons bacon grease. Add leeks, celery and shallot to skillet, season with salt and pepper, and sauté until tender, 10 minutes. Add garlic and sauté for 1 more minute. Remove mixture to very large bowl and set aside. Add butter to medium skillet. When foaming occurs, start swirling skillet until butter turns caramel brown. Add apples and season with salt and pepper. Sauté until crisp-tender, about 5-7 minutes. One minute before apples are done, add chopped sage then stir to combine. Add apples, bread cubes, cooked bacon, and dried cherries to leek and celery mixture then drizzle in 2 cups chicken broth and stir to combine. If you like a more moist stuffing, add up to 1/4 cup more chicken broth. Transfer mixture to prepared baking dish and bake 40-45 minutes, or until golden brown and crisp on top. Check after 20 minutes. If stuffing starts to brown too quickly, loosely place foil on top then continue baking. To make ahead: Complete recipe through sautéing the apples a day ahead of time then refrigerate recipe components separately. Store bread cubes in an airtight bag or container. When ready to bake, follow directions to combine all components and add chicken broth.

SOURDOUGH STUFFING WITH BACON AND APPLES

Sourdough Stuffing With Bacon and Apples image

Some people call it stuffing, some people call it dressing, I call it heaven on a plate! But seriously, my family calls it stuffing regardless of whether it actually gets stuffed into a bird

Provided by patriciamercer84

Categories     < 60 Mins

Time 1h

Yield 1 batch, 10-12 serving(s)

Number Of Ingredients 12

12 cups sourdough bread cubes (cut into 1/2 inch cubes, from about 1 1/2 pounds stale bread)
1/2 cup butter
3 cups onions, chopped
2 cups celery, chopped
2 leeks (cleaned and thinly sliced, white and light green part only)
2 large granny smith apples, peeled and chopped
3 tablespoons fresh sage, chopped
2 tablespoons fresh thyme leaves, chopped
2 teaspoons poultry seasoning
1 lb bacon, cooked and chopped into small pieces
3 -4 cups chicken stock (or broth)
salt (to taste)

Steps:

  • 1. Spread bread cubes out on a rimmed baking sheet (or two, if necessary) and toast in a 350 degree oven until dried out and slightly crisp (10-15 minutes). Set aside.
  • 2. In a large skillet, melt butter over medium heat. Add onions and celery and cook, stirring occasionally, until very soft but not browned, about 7 minutes. Add apples and leeks and cook for a few minutes longer until apples are crisp tender. Add sage, thyme, and poultry seasoning, stir and cook for half a minute longer, then remove from heat.
  • 3. Transfer onion/apple mixture to a very large bowl, add chopped bacon and bread cubes, and toss well. Add two cups of chicken stock, toss well, then add more stock, a little at a time until the stuffing is well-moistened, but not soggy. Taste, and add a bit of salt if desired.
  • 4. Pour stuffing into greased casserole dishes (mine fit into one 9×12-inch dish, but you can divide it if necessary). Cover with foil and bake at 375 degrees for about 30 minutes. Uncover and bake an additional 20 minutes or until the top is golden brown.

STUFFING WITH MUSHROOMS, LEEKS AND BACON

Stuffing With Mushrooms, Leeks and Bacon image

Discord swarms around the issue of stuffing. Should it be cooked in the bird or baked alongside, as dressing? White or corn bread? Firm enough to slice or soft as pudding? Call this recipe the peacemaker, because it's adaptable enough to make everyone happy. You can use white or corn bread (and gluten-free corn bread works perfectly). The mushrooms allow vegetarians to nix the bacon without sacrificing all the flavor. We advocate baking it separately (which technically makes it dressing), but if you want to stuff the turkey, you can do that, too.

Provided by Melissa Clark

Categories     dinner, stuffing and dressing, side dish

Time 2h30m

Yield 8 to 10 servings

Number Of Ingredients 12

3 tablespoons melted butter, more as needed for greasing pan
1 1/2 pounds sliced white bread or corn bread
1/2 pound thick-cut bacon
2 large leeks, trimmed and sliced (3 cups)
1 1/2 pounds mixed mushrooms, cut into bite-size pieces
1 1/2 teaspoons kosher salt
3/4 teaspoon black pepper
2 tablespoons chopped sage
1/2 cup dry white wine
1 1/4 cups chicken stock, more as needed
1/4 cup apple cider, if using white bread
3 tablespoons chopped parsley

Steps:

  • Heat oven to 250 degrees. Butter a 9-by-13-inch baking pan. Trim the crusts from the white bread and cut into 1-inch cubes; if using corn bread, coarsely crumble it. Spread the bread pieces out on one or two large baking sheets. Toast in the oven, tossing occasionally, until very dry, about 30 minutes for white bread, 1 hour for corn bread. Transfer to a large bowl to cool. Increase oven temperature to 375 degrees.
  • In a large skillet over medium-high heat, cook the bacon strips until crisp. Transfer to a paper-towel-lined plate to drain, leaving the fat in the pan. Add the leeks to the bacon fat and cook, stirring occasionally, until soft, 5 to 10 minutes. Add the mushrooms, 1 teaspoon salt and 1/2 teaspoon black pepper. Cook, tossing frequently, until mushrooms are tender and most of their juices have evaporated, 10 to 15 minutes. Stir in the sage and cook 1 minute. Add the wine and cook until it evaporates, about 2 minutes.
  • Spoon the mushroom mixture over the dried bread. Stir in stock. If using white bread, stir in the cider. Add parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper. The mixture should be moist and very soft. If you like your stuffing extremely moist, add enough stock to make it seem slightly soggy but not wet. (Think pudding.) Crumble bacon and stir it in.
  • Transfer the bread mixture to the prepared baking pan. Drizzle 3 tablespoons melted butter over the stuffing. Bake until golden, 35 to 45 minutes.

Tips:

  • For the best flavor, use fresh, high-quality ingredients.
  • If you don't have time to make your own bread cubes, you can use store-bought croutons or stuffing mix.
  • Be sure to toast the bread cubes before adding them to the stuffing. This will help them absorb the flavors of the other ingredients.
  • Don't overcook the stuffing. It should be cooked through, but still slightly moist.
  • Stuff the turkey or chicken just before roasting. This will help prevent the stuffing from drying out.
  • If you're making the stuffing ahead of time, store it in the refrigerator for up to 24 hours before cooking.

Conclusion:

Apple bacon leek stuffing is a delicious and easy-to-make side dish that is perfect for Thanksgiving, Christmas, or any other special occasion. With its combination of sweet apples, savory bacon, and aromatic leeks, this stuffing is sure to be a hit with everyone at the table. So next time you're looking for a special stuffing recipe, give this one a try. You won't be disappointed!
