This is our favorite salad . . . sometimes we just make a meal out of it! Note: I've found that the romaine is best (very crisp) if it's soaked in ice water for approximately 30 minutes, then spin dry. I use my Recipe #175543 however a good quality bottled blue cheese dressing can be substituted

2 heads bibb lettuce
1/4 lb maytag blue cheese
1/8 cup strawberry, sliced

Tips:

  • For the best flavor, use fresh, ripe apples. Granny Smith apples are a good choice because they are tart and hold their shape well.
  • To prevent the apples from browning, toss them in a mixture of lemon juice and water.
  • Use a sharp knife to thinly slice the apples. This will help them to cook evenly.
  • Be careful not to overcook the apples. They should be tender but still have a little bit of crunch.
  • If you don't have any blue cheese, you can substitute another type of cheese, such as cheddar or goat cheese.
  • Serve the salad immediately after it is made. This will prevent the apples from wilting.

Conclusion:

This apple blue cheese bibb salad is a delicious and refreshing dish that is perfect for a light lunch or dinner. The sweet apples, tangy blue cheese, and crunchy walnuts are a perfect combination of flavors and textures. This salad is also very easy to make, so it is a great option for busy weeknights.
