APPLE BRANDY CORDIAL

Apple Brandy Cordial image

It's apple time! This is wonderful apple brandy. It's quick and easy. The longer it sits, the better. I just strain it through cheesecloth before serving, if it settles again. I have also used coffee filters for a fine strain, it just takes longer. I have some that is 8 years old and it is a beautiful amber color and very smooth.

Time 20m

Yield 1/2 gallon

Number Of Ingredients 5

6 cups apples, seeded and coarsely chopped
1 1/2 cups sugar
four inch cinnamon stick, broken in half
1/8 teaspoon pure vanilla extract
3 cups 80-proof brandy

Steps:

  • I remove the seeds because I think they make it bitter if left in the apple.
  • I don't use top shelf brandy, I use a less expensive brandy but not the cheapest either, something in between.
  • I use a glass gallon screw-top jar.
  • Combine all ingredients and place cover on tightly-invert jar, I always place it in a large pan, just in case it might leak.
  • (although, this has never happened) Let jar stand 24 hours, turn jar upright and let stand another 24 hours.
  • Repeat process until sugar dissolves.
  • Store in a dark, cool place 4-6 weeks.
  • Strain through cheesecloth into decanter.
  • Note: I always use very dark red sweet apples and I think that it is the dark red skin that gives the brandy a nice color.

For those times when you buy as many quarts of berries as you can carry, then don't know what to do with them, preserve them into drinkable form.

Provided by Nicole Rucker

Yield Makes about 2 1/2 cups

Number Of Ingredients 7

2 cups fresh blueberries
1 wide strip lemon zest
2 cups applejack brandy (such as Laird's Jersey Lightning)
Simple syrup (for serving)
Sparkling wine or club soda (for serving; optional)
Special Equipment
One 32-ounce jar; 3 layers of cheesecloth

Steps:

  • Combine blueberries, lemon zest, and brandy in jar and seal tightly. Let sit in a cool dark place, shaking jar daily, until mixture is a deep purple color, about 1 month.
  • Strain mixture through cheesecloth into a pitcher or large bowl (do not press on solids or mixture will become cloudy) and add simple syrup to taste. Chill until cold, about 30 minutes. Serve cordial in small glasses.
  • To make a spritzer, place 1 oz. cordial in a flute and top off with sparkling wine.
  • Do Ahead
  • Strained cordial mixture can be made 6 months ahead. Cover and keep chilled.

Tips:

  • Choose ripe, flavorful apples: The quality of your apples will greatly impact the taste of your cordial. Look for apples that are firm, brightly colored, and free of bruises or blemishes.
  • Use a variety of apples: Using a mix of apple varieties will give your cordial a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Gala apples.
  • Don't overcook the apples: Overcooked apples will lose their flavor and become mushy. Cook them just until they are tender, about 10-15 minutes.
  • Use a good quality brandy: The brandy you use will also play a big role in the flavor of your cordial. Choose a brandy that is smooth and has a good flavor.
  • Let the cordial age: Aging the cordial will allow the flavors to meld together and develop. Aim to age the cordial for at least 2 months, but it can be aged for up to a year.

Conclusion:

Apple brandy cordial is a delicious and versatile liqueur that can be enjoyed on its own, added to cocktails, or used in desserts. It's a great way to use up extra apples and makes a lovely gift for friends and family. So next time you have a batch of apples on hand, give this recipe a try. You won't be disappointed!
