1 gallon apple cider
3 Granny Smith apples
1 orange
1/2 cup fresh cranberries
1 tablespoon allspice berries
5 to 7 cinnamon sticks
1/2 cup sugar
1 cup apple brandy or regular brandy

Steps:

  • Pour the apple cider into a large pot and set over medium-high heat. Dice up the apples and toss them into the cider. Peel the rind off the orange in large pieces and toss that in too. Add the cranberries, allspice berries and cinnamon sticks. Add the sugar and stir it around to dissolve. Bring the mixture to a low boil, then reduce the heat to low and simmer for 45 minutes to 1 hour.
  • Add the brandy, then simmer for another 10 to 15 minutes. Serve warm.

I also like to leave a larger sachet in a big crock pot full of apple cider on low all day on Christmas. It smells great and seasons the warm cider well.

2 teaspoons anise seed
2 teaspoons green cardamom pods
2 teaspoons whole black peppercorns

Steps:

  • Cut cheese cloth into 8 6 inch square pieces.
  • Mix together top 5 ingredients. Divide the mixture evenly amongst the square cheese cloth squares. Tie with twine.

1 tablespoon whole cloves
1 tablespoon whole allspice
1 teaspoon orange rind
12 whole cinnamon sticks

Steps:
