1/2 cup all-purpose flour
1/4 cup whole wheat flour
2 teaspoons sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2/3 cup finely chopped peeled apple
1/4 cup raisins
2/3 cup buttermilk
1 large egg, separated
2 teaspoons butter, melted
1/4 teaspoon vanilla extract
SYRUP:
1/4 cup sugar
2 teaspoons cornstarch
2/3 cup apple cider or juice
1 cinnamon stick (1-1/2 inches)
Dash ground nutmeg
Additional butter, optional

Steps:

  • In a small bowl, combine the first six ingredients; stir in apple and raisins. Combine the buttermilk, egg yolk, butter and vanilla; stir into dry ingredients. In a small bowl, beat egg white until soft peaks form; fold into batter. , Pour batter by heaping 1/4 cupfuls onto a hot greased griddle; turn when bubbles form on top. 2 cups complete pancake mix
1 ¼ cups apple cider
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar

¼ cup chopped walnuts
butter flavored cooking spray

Steps:

  • Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.

2 small apples - peeled, cored, and diced

1 quart apple cider

1 large egg
1 large egg white
1/2 cup fat-free buttermilk
1 medium apple, peeled and finely diced (about 1 cup)

After all were gone, we were cleaning up and discovered the unopened cider...and I immediately started thinking...what else can I do with this, besides drink it?! An experiment was in order...I wonder what would happen if I used a little cider in place of some milk in a batch of pancakes...and maybe toss in a chopped apple for kicks and giggles. A wonder-fall brinner!
