A wonderful hearty autumn soup, goes great with a cold sandwich. This is not my recipe however-- I found this on the internet somewhere a while back and don't recall the source-- so if this is your recipe (especially if it could've been copyrighted by now) or you know whose it is, please let me know so I can give credit where it is due!

Time 30m

Yield 4 cups, 4 serving(s)

Number Of Ingredients 6

2 tablespoons butter
2 tablespoons flour
2 cups milk (whole milk works best for this recipe, so does using half milk and half buttermilk, but 2% milk work)
1/2 cup pumpkin puree
2 cups apple cider (use 1 cup low- or no-sugar apple juice with 1 cup unsweetened applesauce when cider is not in season)
nutmeg, for garnishing

Steps:

  • Melt the butter in saucepan on low heat, don't burn the butter!
  • Mix in the flour.
  • Slowly stir in the milk.
  • Stir constantly over medium heat until thickened. (about 15 minutes or so).
  • Add pumpkin, mix and heat thoroughly.
  • Slowly add the cider and fully incorporate.
  • Sprinkle with some nutmeg to serve.
  • For some variation ideas, add some cubed butternut squash or pumpkin, golden delicious apples, and/or orzo. It feels a little empty having nothing but bisque.

APPLE PUMPKIN BISQUE

It's amazing when two ingredients intertwine so perfectly, that regardless of how hard the palate may try, it can't coax them apart. That's what happens to the applesauce and pumpkin purée in this sweet and savory soup. The pumpkin gives substance to the apple; the apple makes the pumpkin sweet and tangy. Eaten together, they become a totally new taste sensation -- and a great way to fit fruit and veggies in! Courtesy of Mealtime.org

PUMPKIN-APPLE CIDER BREAD

Pumpkin-Apple Cider Bread image

Everyone knows just how much I love baking, especially in the fall and winter. To me, nothing says autumn quite like pumpkins. So my pumpkin bread, muffins, butter, pies, cookies, and even pumpkin-shaped cakes are always looked forward to by my friends, family, and co-workers. This apple cider-pumpkin bread is great for snacks, dessert, or breakfast. Toast it, warm it, spread on some butter, cream cheese, apple butter, or just slice some off to eat as is.

Tips:

  • For a smoother bisque, blend the soup until it reaches your desired consistency. You can also use an immersion blender to blend the soup directly in the pot. Serving hot or warm, Apple Cider Pumpkin Bisque is an excellent choice for a cozy and comforting meal.
  • Feel free to adjust the spices according to your taste preference. If you like a spicier bisque, add more cayenne pepper or red pepper flakes.
  • For a thicker bisque, add more pumpkin puree or mashed potatoes. You can also simmer the soup for longer to reduce the liquid.
  • If you don't have heavy cream, you can use milk or half-and-half instead. However, heavy cream will give the bisque a richer flavor.
