2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup butter, softened
2 large eggs
1 teaspoon vanilla extract
2/3 cup 2% low-fat evaporated milk
3 cups peeled cored and finely chopped baking apples (about 3 medium)
3/4 cup finely chopped pecans
powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Grease 13 x 9-inch baking pan.
  • Combine flour, baking powder, cinnamon and nutmeg in medium bowl.
  • Beat granulated sugar and butter in large mixer bowl until creamy.
  • Beat in eggs and vanilla extract until smooth. Alternately beat in flour mixture and evaporated milk.

3 c finely diced apples
2 tsp cinnamon
2 tsp vanilla
3 1/2 c flour
1 tsp baking soda
1 tsp salt
2 c sugar
1 1/4 c vegetable oil
3 eggs
1/2 container german chocolate frosting
GLAZE
1 c toasted pecans
3 to 4 Tbsp vanilla soy milk
2 Tbsp cinnamon
2 c powdered sugar

Steps:

  • 1. Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.
  • 2. Preheat the oven to 325 degrees F. Lightly grease a Bundt pan or tube pan.
  • 3. In a bowl, mix together the apples, vanilla, and cinnamon. In a separate bowl, mix together the flour, baking soda, and salt.
  • 4. Using a mixer beat the sugar, oil, German Chocolate Frosting and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.
  • 5. Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean.
  • 6. Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate
