CHEDDAR APPLE CRISP
I never understood the cheese with apple pie thing until I made this recipe. The cheese in the crumble elevates a simple apple dessert to a whole new level, without losing the home/farm comfort. Then I lost my recipe for a couple of decades. Now I just found it again, and I can't wait to make it!

APPLE-CHEDDAR WAFFLES
We used self raising flour, which has both leavening and salt in it, as a shortcut ingredient to make these savory and fluffy waffles. A small bit of sugar in the batter doesn't add detectable sweetness, but keeps the waffles moist and helps the exterior crisp up when cooking.

Steps:
- Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.
- Heat a waffle iron according to the manufacturer's instructions. Working in batches, lightly butter the waffle iron, then ladle in some of the batter. Close the iron and cook until the waffles are browned and crisp, 5 to 7 minutes. Remove to a baking sheet and keep warm in the oven while you cook the remaining waffles.
- Meanwhile, mix the maple syrup and mustard together in a small bowl. Toss the greens with the vinegar, olive oil and a pinch each of salt and pepper in a large bowl. Divide the waffles among plates, along with the salad. Drizzle the maple mixture over the waffles or serve on the side for dipping.

Tips:
- Choose the right apples: For the best apple crisp, use a combination of tart and sweet apples. Some good choices include Granny Smith, Honeycrisp, and Braeburn.
- Use fresh, cold butter: Cold butter will create a flaky, tender crust. If you don't have time to chill the butter, you can freeze it for 15 minutes before grating it.
- Don't overmix the topping: The topping should be crumbly, not smooth. If you overmix it, the crisp will be tough.
- Bake the crisp until the topping is golden brown and the apples are bubbly: This usually takes about 45 minutes. If you're not sure if the crisp is done, insert a toothpick into the center. If it comes out clean, the crisp is done.
- Serve the crisp warm with ice cream or whipped cream: This is the best way to enjoy apple crisp!
Conclusion:
Apple crisp is a delicious and easy-to-make dessert that is perfect for any occasion. With a few simple tips, you can make a perfect apple crisp every time. So next time you're looking for a sweet treat, give apple crisp a try!
