Time 5h10m

Yield 8 to 10 servings

Number Of Ingredients 19

Nonstick cooking spray, for the pan
15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 tablespoons packed light brown sugar
1/4 teaspoon kosher salt
5 tablespoons unsalted butter, melted and cooled
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced
1 cup granulated sugar
2 tablespoons cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
Store-bought caramel sauce, for serving

Steps:

  • For the graham crust: Preheat the oven to 350 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.
  • Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.
  • For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.
  • For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.
  • Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

### Key Takeaways: * **Simplicity is Key**: Cheesecake pie is a relatively easy dessert to make, with a simple crust and a smooth, creamy cheesecake. Don't overcomplicate the recipe with too many ingredients or techniques. * **Use High-quality Ingredients**: The quality of your ingredients will greatly impact the taste of your pie. Use real butter, fresh eggs, and high-quality cream cheese for the best results. * **Make the Crust Ahead of Time**: The crust can be made a day or two in advance and stored in the refrigerator or freezer. This will save you time on the day you're making the pie. * **Chill the Cheesecake Thoroughly**: After the cheesecake is baked, it needs to be chilled for at least 4 hours, or preferably, cover and refrigerate it for at least 8 hours or even better, once baked and cooled, place it in a refrigerator for 24 hours for the flavors to meld and the texture to set perfectly. Chilling the pie allows the flavors to meld and the texture to firm up. * **Don't Overbake the Cheesecake**: Cheesecake is a very forgiving dessert, but it can be overbaked. The center of the cheesecake should still be slightly wobbly when you remove it from the heat; it will continue to set as it cools. * **Use a Water bath**: This will help the cheesecake bake evenly and prevent it from cracking. * **Top the Cheesecake with Your Favorite Fruits or Sauce**: Once the cheesecake is chilled, you can top it with your favorite fresh berries, a fruit glaze, or a chocolate ganache. * **Serve at Room temperature**: Cheesecake is best served at room temperature, so let it sit for about 30 minutes before slicing and serving. ### General Guidelines for Cheesecake Baking: * **Oven temperature:** Moderate, between 325°F (163°C) and 350°F (177°C). * **Baking time:** Variable, depending on the size and depth of the pan used, as well as the type of crust. Typically, a 9-inch (23 cm) cheesecake baked in a springform pan will take about 60-75 minutes. * **Don't over-bake the cheesecake.** The center should still be slightly wobbly when you remove it from the heat; it will continue to set as it cools. * **Avoid opening the door during the first half of the cheesecake pie's allotted cooking time.** This can cause the cheesecake to fall. * **Let the cheesecake cool completely before serving.** This will help prevent the crust from becoming soggy. ### Common Mistakes to Watch Out For: * **Over-beating the batter:** This can cause the cheesecake to be grainy and thick. * **Using the wrong pan:** Cheesecakes are typically baked in a springform pan, which allows the sides of the pan to be removed after the cheesecake is finished. * **Using the wrong amount of water in the water bath:** Using too much water can cause the cheesecake to become soggy. * **Over-baking the cheesecake:** As mentioned above, this can cause the cheesecake to be dry and crumbly. * **Not chilling the cheesecake long enough:** Chilling the cheesecake allows the flavors to meld and the texture to firm up. * **Serving the cheesecake at the wrong temperature:** Cheesecake is best served at room temperature, so let it sit for about 30 minutes before slicing and serving. ## Bottom Line: Cheesecake pie is a classic dessert that is perfect for any occasion. By following the tips and tricks in this article, you can make a delicious cheesecake pie that will be the hit of your next party or get-together.
