4 loin pork chops, 1-inch thick
Salt and freshly ground black pepper
8 sprigs fresh thyme
1 orange, halved
1 tablespoon cognac
3 Gravenstein or other crisp cooking apples, peeled, cored, and cut into 1/4-inch slices
1 teaspoon sugar

1/4 cinnamon stick
