Just an experiment for a glaze to pour over smoked mahi mahi fillets. These measurements are approximate. Apparently it was suitable since dinner was very quiet the first time I made it. Big hit at my house.

1 ½ cups honey
1 cup apple juice
⅓ cup molasses
¼ cup barbeque sauce
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg

Steps:

  • Combine honey, apple juice, molasses, barbeque sauce, cinnamon, and nutmeg together in a saucepan; bring to a soft boil. Reduce heat and simmer, stirring occasionally, until glaze is smooth and thickened, about 15 minutes.

GLAZE
1 c powdered sugar
2 Tbsp honey
2 Tbsp milk
CAKE
3 c honeycrisp or granny smith apples peeled and diced ( i used granny smith in this one and it took 2 large apples)
1 c lightly toasted walnuts
2 tsp vanilla
2 tsp ground cinnamon
3 c all purpose flour
1 tsp baking soda
1 tsp salt
2 c sugar
1 1/4 c vegetable or canola oil
3 eggs

Steps:

  • 1. Preheat oven to 325 degrees lightly grease or spray bundt pan
  • 2. In a bowl mix the apples, walnuts, vanilla and cinnamon. set aside. In a seperate bowl sift together the flour, soda and salt.
  • 3. Beat sugar,oil and eggs in large bowl. Add dry ingredents and beat until combined. (Batter will be thick) Fold in apple mixture.
  • 4. Scrape batter into sprayed bundt pan and bake on center rack for 1 to 1 1/2 hours. ( mine took 1hr 15 minutes) Allow cake to cool 45 minutes or so. turn onto plate and drizzle with glaze

1 1/2 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2/3 cup granulated sugar
1/2 cup canola or vegetable oil
1 egg
1 egg yolk
1 1/2 teaspoons vanilla extract
1/2 cup milk
1 cup chopped peeled apples
1/2 cup dried figs, chopped
1/3 to 1/2 cup powdered sugar
2 tablespoons honey
1 tablespoon butter, softened
Dash ground allspice

Steps:

  • Heat oven to 350°F. Spray bottom of 8x4-inch loaf pan with cooking spray. In medium bowl, stir flour, cinnamon, baking powder, salt, nutmeg and 1/4 teaspoon allspice with whisk.
  • In large bowl, beat granulated sugar and oil with electric mixer on medium speed 1 minute or until blended. Beat in egg and egg yolk, one at a time, beating well after each addition. Beat in vanilla.
  • Beat flour mixture into sugar mixture alternately with milk on low speed, beating after each addition until smooth. Stir in apples and figs. Pour into pan.
  • Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 10 minutes.
  • Loosen sides of loaf from pan; remove from pan and place top side up on cooling rack. Cool completely, about 2 hours.
  • In small bowl, beat 1/3 cup powdered sugar, the honey, butter and dash of allspice until smooth, slowly adding additional powdered sugar for desired glaze consistency. Spread glaze over top of loaf. Let stand until set. (Glaze will remain slightly tacky to the touch.) Wrap tightly and store in refrigerator.
