APPLE MUFFINS (VERY HEALTHY)
This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great.

Steps:
- Sift flour and spices and add sultanas.
- Beat egg whites and add the oil, apple, honey and milk and blend thoroughly. Add to the dry ingredients and stir until thoroughly mixed.
- Spoon into a lightly greased muffin tin and bake in a moderate oven for 17 minutes or until cooked.
Tips:
- Use ripe apples for the best flavor and texture.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
- Be careful not to overmix the batter. Overmixing can make the muffins tough.
- Fill the muffin cups only about 2/3 full. If you fill them too full, the muffins will overflow while baking.
- Bake the muffins until a toothpick inserted into the center comes out clean.
Conclusion:
Apple muffins are a delicious and healthy snack or breakfast option. They are easy to make and can be customized with different ingredients to suit your taste. Whether you like them plain, with nuts, or with a streusel topping, there is an apple muffin recipe out there for everyone. So next time you are looking for a quick and easy treat, give apple muffins a try.
