I found (and lost) a great recipe from Sunset or Family Circle magazine about 25 years ago. This is my version from my spotty memory! BATTER WILL BE THICK! Works best with GRATED apple.

1 cup brown sugar
1 1/2 cups all-purpose flour
1 1/2 cups oatmeal
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground mace
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1/3 cup canola oil
2 eggs
5 -6 apples, peeled, cored and GRATED
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan.
  • Mix all dry ingredients together.
  • Lightly beat eggs in small bowl. Add oil and eggs to dry ingredients and stir until moistened. Fold in apples and nuts and pour into loaf pan.
  • Bake 1 hour or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool on rack.

3/4 cup old fashioned oats (or 1 cup)
1 1/4-1 3/8 cups water (or 1 5/8 to 1 3/4 cups)
3 tablespoons molasses (or 1/4 cup)
1 1/2 tablespoons sugar (or 2 tablespoons)
1 1/2 teaspoons salt (or 2 teaspoons)
3 cups bread flour (or 4 cups)
1 1/2 teaspoons active dry yeast (or 2 teaspoons)

Steps:

  • Use the least amount of liquid listed in the recipe!
  • Place all ingredients in bread pan, in the order recommended by your brand of machine.
  • Select Basic/Standard and Light Crust settings; Press Start.
  • Observe the dough as it kneads; After 5 to 10 minutes, if it appears dry and stiff or if your machine sounds as if it's straining to knead it, add more liquid 1 tablespoon at a time until the dough forms a smooth, soft, pliable ball that is slightly tacky to the touch.
  • After baking, remove from pan and cool for one hour before slicing; great toasted!

This bread recipe came off the back of the bread flour. I found it to be so good, just a "tad sweet', and its great toasted. Cook time is what is suggested on your ABM. For a softer crust, butter the crust of the bread and put in a plastic bag as soon as it comes out of the machine. This recipe makes a 1 1/2 pound loaf.
