These are easy and turned out beautifully on my first attempt! If I made them in jumbo muffin tins (which yes, I own!) they would be Starbucks worthy at a fraction of the cost and sooooo low fat! Jumbo would only be 6 points (compared to McDonalds low fat 9 point muffins or fruit and fibre for 12). I used granny smith apples but you can use any.

2 cups apples, peeled and shredded (= 2 small apples)
1 1/2 cups all-purpose flour
1 cup quick oats
2/3 cup firmly packed brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup milk
2 tablespoons vegetable oil

Steps:

  • Cook for 15-18 minutes at 375 or until finished (use a toothpick as always!).

These are moist and sweet enough to please and my 1 year old and 3 year old loved them. They definitely stick to paper muffin cups a little so I think I'll try skipping the paper cups next time and opt for just the muffin pan and some cooking spray.

1 (1 1/2 ounce) packet instant oatmeal, any flavor (I used maple and brown sugar)
1/4 cup flour
1 teaspoon baking powder
1/4 cup sweetened applesauce
2 -3 ounces diet soda, any flavor
6 teaspoons light brown sugar

  • mix first 5 ingredients
  • spoon into 6 muffin cups.
  • sprinkle top of each muffin with 1 teaspoons brown sugar.
  • bake at 375 for 15-20 minutes.

⅓ cup tightly packed brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 ½ tablespoons butter, cut into small pieces
2 cups peeled and finely chopped apples
1 teaspoon fresh lemon juice
¾ cup white sugar
½ cup honey
½ cup buttermilk
½ cup oil
2 large eggs
2 teaspoons vanilla extract
1 cup quick-cooking oats
2 cups whole wheat flour
2 ½ teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
