4 large carrots, peeled, grated
1 large golden delicious apple, peeled, grated
1/3 cup chopped roasted cashews
1/3 cup raisins

1/2 cup apple (Diced)
1 head cabbage
1 tablespoon lemon juice
1/2 cup mayonnaise
1/4 cup nuts (Chopped)
1 tablespoon orange juice
1/8 cup orange rind (Grated)
1 -2 pinch paprika (To Taste)
1 -2 pinch pepper (To Taste)
3/4 teaspoon salt
1/2 cup seedless raisin
1 teaspoon sugar

Steps:

  • Soak raisins in hot water 10 minutes.
  • Drain and chill.
  • Mix cabbage, apples, raisins and nuts and chill.
  • Mix Mayonnaise, salt, sugar, lemon juice, orange juice, pepper and paprika thoroughly.
  • Toss with chilled vegetables & fruits.
  • Sprinkle with grated orange rind.

1 medium apple (whatever is your favorite)
1/4 cup raisins (you could also use any dried fruits cranberry, blueberry etc.)
1 cup chicken, cubed (you can use the can or just a medium chicken breast)
1 tablespoon mayonnaise (I prefer miracle whip)
1/4 cup raspberry pecan vinaigrette (or your favorite salad dressing)

Steps:

  • - cut apple into 1/2" cubes.
  • - cut chicken into 1" cubes.
  • - mix apples, raisins, and chicken together.
  • - In a separate bowl whisk together Raspberry vinaigrette and mayonnaise until smooth.
  • - pour over the chicken mixture and toss to coat everything.

2 heads leaves lettuce (use different varieties if you want)
2 crisp red apples, chopped and cored
1 English cucumber, chopped
1/2 cup craisins
1/2 cup golden raisin
1/2 cup feta cheese
1/2 cup pecans
2/3 cup olive oil
1/3 cup white balsamic vinegar
1 garlic clove, crushed
1 1/2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon fresh pepper

Steps:

  • Combine salad dressing ingredients, shake & let set for at least 2 hours at room temperature. (This is for If you can't find Girard's White Balsamic Vinaigrette in stores).
  • Put all salad ingredients together in large bowl.
  • Toss salad with dressing and chow down!
  • **Cooking time does not include dressing.

1 medium head red cabbage, shredded
3/4 c apple juice
salt to taste
2 apples, peeled, cored and diced
1/2 c golden raisins
4 Tbsp cider vinegar
4 Tbsp honey
1 Tbsp oil

Steps:

  • 1. In a dutch oven, place cabbage, apple juice, and salt. Simmer mixture for 15 minutes.
  • 2. Add the raisins and apples and continue simmering until cabbage and apples are tender and most of the liquid is absorbed.
  • 3. Stir together the vinegar, honey and oil until blended. Pour dressing over the cabbage and simmer mixture for 2 minutes or until heated through. Refrigerate until serving time. Serve warm or cold.
